What do you have for lunch that is healthy, filling & easy to make? Doesn't need to be trans portable as I work from home.

Home made soup - cheap, filling and really easy way to up your veg intake.

  1. Batch cook soup the night before. If it's a vegetarian soup have it with some oat crackers and tuna for the protein filling fix
  1. I buy M&S pre cooked chilli prawns. I have them with broccoli and left over rice or pasta
  1. Grilled salmon and sturdier veggies
  1. Beans on toast with a boiled egg
  1. Roasted cumin chickpeas with lots of fresh tomatoes and a small pitta.

Halloumi and puy lentil salad with pre cooked lentils from a pouch, lemon dressing, and mint if I have it, plus leaves, tomatoes etc and anything else nice in the fridge.

Red lentil & carrot soup with lemon juice in at the end and lots of garlic. Takes about 20 mins.

Poached egg and avocado on toast.

Baked potato done in the microwave with whatever filling you like.

Salami/mortadella/cured meats with shop bought potato salad and coleslaw, cherry tomatoes and olives.

Shop bought, cold, smoked mackerel with whatever salad bits you have to hand.

Cold tuna pasta salad made the night before.

I tend to cook salad for quick lunch. Add some available protein, and lots of seeds and nuts. Add some chopped up toast or couscous to make it more filling if I'm quite hungry.
Normally have it with either blue cheese dressing or sesame dressing.

Hummus, falafels, tomatoes, cubes of cheese and anything else really! A pitta or crackers.

Roast chicken, Mayo and lots of salad

Soups. I love homemade butternut squash soup. It's very filling and yummy

Roast veg and hummus with cous cous
