what to do with too much broccoli

I only needed a small amount when DS went shopping
He came home with 3 packs, each pack has 2 headsConfused
Soup is my first thought but I'm open to ideas or recipes. I have an instant pot if there are any good recipes that use that

Chuck it in stir fry's

Definitely a broccoli and Stilton soup. One of my favourites! Throw it in with pasta such as macaroni cheese with added veg, a nice broccoli cheese bake alongside a roast. Stuffed potato skins are lovely when you scoop out the potato and mix with cheese and broccoli before returning to the skins and baking with more cheese on top.

I had excess this week and have made:
Pasta bake with Roast Broccoli and Tomatoes
Creamy Broccoli Soup
One tray lemon chicken bake with veggies (including broccoli)
Green Risotto
Savoury Muffins

Some portions have gone into the chest freezer.

Roast it with garlic and salt, then squeeze over some lemon juice and sprinkle with Parmesan. I could eat a while head of broccoli like this.

Hot broccoli dip.

Blitz with red onion, garlic, red pepper, Mayo, grated cheese. Bake in the oven.
Yummy jacket potato topping.

I would use what you can use for now and chop and freeze the rest to add to soup/stew/curry etc...

You can never have too much broccoli! As previous posters have said, throw it in pasta bakes, roast it with garlic and olive oil, stir fry it with soy sauce.
