Family quick meals

We are in rut with our meals, and I'm struggling to get my 2 year old to eat healthy atm (fussy stage) what are your go to quick family recipes? Thanks

Fresh pasta and sauce (my kids will eat spinach this way)
Stir fry
Fried rice
Frittata / omelette
Thick h/m soup so the 2 yo can eat it - leek and potato, brocolli and cheddar, vegetable, sweet potato with crusty bread to dip
Quick curry and rice was always a hit with mine only takes as long as it takes to fry off some chicken

Any kind of pasta - pesto and cream cheese mixed together with peas and brocolli is popular, as is tomato and meatball (I buy the fresh ones but you can also make them), and tuna and sweetcorn.

Gnocchi with butter and cheese (not healthy but cooks in 2mins!)

Omlettes - I like cheese and veg. My 4 year old likes a plain one with grated cheese and veg all seperated.

Meat wise, mini chicken breast fillets cook quickly.

Thanks I'm really ashamed to say I don't make much homemade food so hence trying to now start to home cook more.

I don’t have kids yet but my husband is a very fussy eater so I have to hide vegetables when it’s my turn to cook.

I make fajitas with mince. I dice onions and peppers up really tiny and mix into the mince.

Frozen spinach is great, if you get the chopped one it’s really finely chopped so can be added to pretty much anything (from frozen) without changing the texture (e.g. tomato sauce). I also add it to risotto - it does make it go green though.

Homemade beans on wholemeal toast with grated cheese on top.

French Bread Pizza - french stick, chopped tomatoes, oregano and basil, salt, cheese in the oven for 10.

Big tortilla omelettes

Fish finger wrap

Salmon with rice and edamame and broccoli (with soy to splash over)

Vege egg fried rice

Potato boats - bake, scoop, mash with cheese, mushrooms, bacon, stuff and grill.

2 day/way bolognese : day one as bolognese and day two as chilli con carne with black beans and peppers cooked in.

Snack plates - crudités, cheese, cold meats, hummus, pita.

We make quick and easy spaghetti meatballs for picky DD.

Bung a bunch of meat balls in the oven until they're brown - about 20 mins.

Cook some spaghetti or linguine.

Warm up a jar of tomato sauce (we use Seeds of Change).

Stir cooked meatballs into sauce and stir through pasta.

Served with cucumber and pepper sticks.
