What can I plant this time of year indoors?

I'm looking for something I can plant and grow easily indoors from a seed preferably. Is there anything easy that will grow this time of year? It's to do with a child

The cut off bottoms of spring onions grow well on my windowsil. Everything else dies.

Hyacinth bulbs? Get specially treated ones that flower at or near Xmas. Or amaryllis.

If you get a grow light, you can get ones that attach to seed trays, you could grow herb seeds like basil, coriander, salads etc on a windowsill. As a longer project kids usually enjoy collecting and planting things like acorns, conkers, rosehips, and seeing them come up in the spring. You can get lots of different colours and flower heads of amaryllis bulb now and they grow fast so they are a good choice as a pp said. Lots of places have bulb sales on now too.
