Eating solo for the next two nights - what should I have?

I usually cook for 5 people every night and I've forgotten how to do this! DH is taking the DC to see his parents and I get to stay home (I KNOW!)

I need to go to the shops today as he's taking the car. What should I get? What did I used to eat when it was just me? Can't afford take-away unfortunately.

I used to get those packs of tortellini!!! Smile i miss them..... my household is 7 people! So would have to buy all the tortellinis the supermarket has Confused

Fillet steak, peppercorn sauce, baked potato,fried mushrooms and some broccoli. And some wine.

Really easy Mexican food, like nachos and quesadillas.
Chinese fake-away.
A roast chicken of some kind (I like mine Caribbean style).
Pastry of all kinds.
A cheese board.

Some really nice fresh fruit, like mango, watermelon, raspberries, etc. bio yoghurt and granola for breakfast. More pastries.

A large quantity of posh salt and vinegar crisps and a box of ice creams for the freezer. Maybe a frozen cheese cake Incase I fancy more dessert.

Breakfast, fruit, nice ham, nice cheese crusty bread.

Lunch salmon baked in foil with a dot of butter and herbs served with green beans and crushed roast new potatoes.

Dinner Filet steak with onion rings and chunky chips / wedges.

Banoffee pie or something chocolate.

Day 2

Breakfast kedgeree or nasi goreng

Lunch chicken breast stuffed with mozzarella served on tortellini with a cream / lemon sauce

Dinner home made toad in the hole made with really spicy lincolnshire sausages and onion gravy (maybe add a kebab of veg)

fresh fruit salad made with tropical fruits.

One night would be quiche and salad as I'm the only one in our house that likes it
The other night would be a M&S Gourmet meal for one

Washed down with loads of red and nice chocolate

Breakfast I’d go for perfectly poached egg on a slice of lightly toasted sour dough with really crispy, grilled bacon and tomatoes with lots of black pepper and a glug of balsamic.

Nice pastries/other cake from your nearest bakery.

Mini fry-up (scrambled eggs, bacon, sausage and toast).

Posh ravioli ready-meal (M&S four-cheese ravioli is AMAZING).

I always have my favourites which my DH doesn't like/isn't keen of.. m+s chicken Kiev and chips, curry or a stroganoff mmmmm

When Dp and dd are away (a rare occurrence) I revert to not cooking and instead eating snackie plates of olives, dips, crackers etc with cocktails, crisps and chocolate. In between late nights with friends (in the old world) and long lie ins.
It’s bliss and reminds me of my 20s.

Then I feel guilty about an hour before they return and tidy up/cook.

I tend to head to the m&s food hall. If not I make a chicken and broccoli bake and have that both nights with a glass of New Zealand sauvigion blanc. I tend not to eat breakfast. Normally have dips and canape bits for lunch

Crisp sandwich, wine and cheese. Do not even think about cooking!

I sometimes go and buy a ready meal as it's also so unbelievably rare that I'm not cooking for anyone else. I take ages choosing. And then eat it and remind myself how much nicer real cooking is!

I am so rarely alone. Last time I had a pork pie, crisps and several chocolate bars washed down with Prosecco. Bad I know but eat really healthily usually. Don't think I could do that for 2 nights. I'd do something quick like a salmon fillet brushed with pomegranate molasses with salad. Or carbonara, maybe with prawns rather than bacon. Or as well as.

All the cheese. And on the second night, my favourite dirty tea: cauliflower cheese with chips to dunk in the sauce. Oh it's all class round mine!

Crisps and wine covers all the basic food group requirements for a night on your own. You can eat actual food tomorrow.

I always cook myself mushroom risotto when I'm home alone - the dcs hate mushrooms and dh doesn't drink white wine, so I buy a really nice cold bottle of white, put a glassful in the risotto and pour myself one whilst I'm cooking it. Loads of Parmesan, maybe some rocket or spinach.
Or, I buy fancy picky food - nice bread, olives, hummus etc etc that no one else in the family would class as a proper meal.

Well my 48 hours has commenced and of course the first thing that happened involved one of our builders accidentally drilling through a pipe and so now I have no hot water 🤦🏻‍♀️

Tonight I'm having baked camembert with bake-at-home bread and other various dippy things.
Tomorrow I'm having that roasted veg with orzo and harissa invention that a pp suggested.

Breakfasts will be pain au chocolat and Nutella roll-ups and I just had a bacon and egg bagel for lunch.

I've also armed myself with a bottle of red and a box of lindor for this evening. Oh and my favourite GU cheesecakes were reduced so I got a couple of those too 👍
