What to do with a whole chicken?

Need inspiration pls

Got a whole chicken for dinner tonight, I plan to make soup with the carcass but need to think what to do with the actual chicken. Probs roasted whole but any ideas with what flavours and sides?

Food shop came today so have full fridge / cupboard with all sorts of carbs / veggies and half a pack of pancetta that could do with being used up

TIA

I saw a lovely recipe for peas, leeks & pancetta, you could serve that alongside a simple roast chicken?

I'd do full roast and include the pancetta in a stuffing. Roast and mashed potatoes, veg of your choice.

Or, use the pancetta for a carbonara tomorrow and today brush the chicken with tandoori paste and roast on high. Meanwhile make Bombay potatoes in the same oven and a veggie side dish on the job.

Make sure that you get at least six meals out of that chicken for four people or you’ll never hear the end of it on here 🤣

I'd make a cheesy chicken pie. Just fry off the chicken, add mushrooms, onions a couple of tablespoons of creme fraiche and stir a load of grated cheese through. Stick a lid on or make into pasties.
