Ideas of easy, weight loss meals?

I really want to lose weight and want to make it as easy as possible for myself.
I was thinking of getting together a few recipes that make a "batch" of super healthy, veg heavy meals that I can have for lunch and dinner to make it easier to loose weight. Ideally, meals I can adapt for the kids to eat like a veg curry that I can throw a few chunks of chicken into.

Any ideas?

I've just made THE best chicken curry tonight, I don't eat it with any starchy carbs as it's a complete meal for me (lots of veg) but you could add rice/naan for the kids. Would you like the recipe? Wink

I buy a pack of butternut squash and sweet potato soup mix. Do half as soup with lentils added onion etc and half as a Dahl with added lentils and onions. Easy quick, and filling.

Ok -

Diced chicken breasts marinated in Pataks Tandoori paste for a few hours in the fridge.
Chop a whole load of veg - I used onions, peppers, white courgette, aubergines, coriander stalks and half a bulb of garlic.
Dry fry the chicken for a couple of minutes to seal it and put to one side.
Heat some oil, add the onions and coriander stalks and a pinch of both cumin and mustard seeds. It will start to smell amazing now!
Add your favourite spices, I use chilli, cumin, garam masala, ginger and turmeric. Stir for a minute then chuck all the veg in so it's all coated, pinch of salt too.
When the veg has softened, add the chicken pieces, a tin of chopped tomatoes and some water.
Leave to simmer covered for about 20 minutes until tender.
Finally, turn the heat off and add fresh chopped coriander leaves and stir in a big dollop of Greek yogurt to give it a slightly creamy taste.

Perfection 😍

Sometimes I add lentils and stock for added fibre, this is also great for weightloss as I find it makes me poo at least three times the following day Blush

Frittata with sliced boiled new potato's, added to fried in a little olive oil spring onions and chilli topped with some mozzarella and finished under grill. Serve with spinach red onion and tomato salad.

Pan fried salmon with lots of veg. It's so easy I use salmon straight from the freezer and just a bit of olive oil. The whole meal is ready in 10 mins.

Check out the Slimming Eats website. There are many one pot meals on there. You can also search by what you fancy. So say you fancy eating spag bol. Search the site for it and there'll be a low cal version of it.

My favourites recipes on there are cheeseburger pasta, Cajun pasta, pizza chicken,
