Side of salmon - easy meal ideas!

DS has got to make a family meal for his food tech GCSE. I've taken out a side of salmon I've had in the freezer for ages and DS wants to do something with it.

Looking for really simple recipes/meal ideas that don't require too many ingredients so he can plan tonight's dinner and hopefully not ruin the salmon!!

I roast mine in foil, and have it with roast potatoes, roast beetroot and sometimes some red onion and cucumber pickled in white / red wine vinegar with honey and dill. Served with very unhealthy portions of hollandaise...

Hmm that sounds good.

How long do you roast for and how do you get it not to stick to the foil?!

Put it in a pan with a lid and poach it (chuck in some bay leaves) and serve potato dauphonoise and a green like asparagus or broccoli. Very yummy!

And potato dauphonoise is really quite easy to make but seems "fancy"!

There is a recipe in Jamie's 30 minute meals. Roast with peppers, make a rice salad and serve with wraps for fajita style dinner. Dead easy and sure you could google the recipe

My favourite way of eating salmon is to roast it and then for the final five minutes, put prawns and mushroom slices on top, cover with grated cheese and grill.

Best served (I think) with baked or mashed potatoes plus broccoli and/or green beans.

I also really like it en croute, but that's more of a faff so I don't often do it.

We do a real simple nigella recipe which is sugar and Madras powder.

Another fine idea and poaching would be very simple. Just the slight problem of not have a pan big enough. Wonder if I could improvise?

Or you could top with pesto and roast for 30 mins.

If you want to poach it but dont have a high enough pan, just slice it up and poach place is so it fits side by side, or do it in batches. Or if you've got a roasting dish which is safe to use on the hob, you can sit the dish over 2 hobs and heat with both.
Roasting is the way to go if you want to keep it whole for presentation maybe?

I like this recipe for spiced salmon. It's really easy, and if the salmon's too big, just cut it in two and cook side by side.

Cut into cubes, marinate in teriyaki sauce and then bake. Serve with stir fried veg and rice, cous cous or wraps.

You can hire fish kettles from Waitrose.

I usually marinate it with soy sauce/ginger/honey/sesame oil/five spice, then bake/steam it in a foil parcel with very thinly sliced peppers and onions. Serve with rice.

Glased balsamic salmon
Is balsamic vinegar, runny honey, splash of white wine, ww vinegar or sherry vinegar & dijon mustard
Mix together
Bake covered salmon in rhe oven
Serve with pota, noodles rice or pasta, it's so easy
Makes a change from salmon and pesto

I use salt, black pepper, chilli flakes and soy sauce. Drizzle olive and bake in foil for 20 mins. We have ours with onion, carrot, broccoli and red pepper noodle stir fry.

Following this thread. We have lots of Salmon at home but have been making it the same way (mixing a lemon and honey glaze over the Salmon whilst cooking) need some new ideas. Thanks for the thread
