Packed lunches for coeliac child

My DD has coeliac disease and I need to make her packed lunches. If she has sandwiches she will eat the filling, nibble a bit of bread and leave the rest. Absolutely won't eat school meals.

So far she has had a combination of mini crustless quiches, cold roast potatoes, chopped cucumber/tomato, grated cheese, houmous.

What else can I give her? I'm running out of ideas. She's 4.

Thanks for all the great suggestions, lots to try. I made the pizza muffins today. Hopefully they will go down well tomorrow.

Corn thins are a bit.like thin big rice cakes, but obviously made with corn. You can get them in Tesco's, bit sure where else. Sainsbury's also do mini tortillas - old el paso market ones at 10 for £1.90 ish that are gluten free but in the normal aisle..
