Weekend lunch inspiration

What interesting lunches do you have at the weekend? I don't mean a roast but anything else? We're getting very bored of beans on toast, fish finger sandwiches and cheese on toast.

Please inspire me with your lunch choices!

I've been buying the Richmond vegan sausages and some puff pastry. Add some chutney on the pastry baking and makes love sausage rolls Smile

We had leftovers and the kids had bacon rolls today- a treat! Often toasties, soup and roll, crackers and cheese, quiche and salad....I find lunch the dullest meal and am glad if there are dinner leftovers to reheat!

I made a veggie and chorizo frittata for lunch today. Had it with a Tesco 3-cheese bloomer. Yummy£

We tend to only eat two meals on a weekend so will have a big brunch at 11ish after a nice lie in and then dinner around 6/7. Today was those part baked baguettes you put in the oven with bacon and then we’ll have a big roast tonight.

Although this definitely doesn’t work if you have small children!

Baked Camembert with bread
Bacon sandwich
Halloumi with sweet chilli in a wrap with salad
Sausages, poached eggs, beans
Toasties with soup

I use up all the veg on Saturday before the Sunday delivery, so every Saturday lunch is veggie.

This week chunky soup ( tomato based with basil) served with toasties. There was so much we had it today as well.
Last week veg curry with raita and flat breads as we had leftover yogurt as well.
Week before was a traybake with a tin of toms chucked in and lots of herbs: sort or ratatouille: served with feta in wraps.

Sausages, soup, cheese, bakey bread baguettes, salad, cucumber, ham etc.

Tends to be an empty the fridge meal!
