Leftover Curry Sauce

I've made a chicken curry for dinner tonight, and there is a lot of sauce left in the pot.

Is there anything that can be done with it at all? I'm trying very hard to reduce our waste right now, as we throw a shocking amount, and so I want to turn that around.

I thought I'd check if any of you savvy lot knew any of any ideas, as I've googled and came up with not very much at all. Curry Omelette anyone? Envy

Turn into soup? A lentilly dhal kind of soup. With yoghurt on top and coriander. Or put a tin of chickpeas and some spinach in it.

Can you not just freeze it,you could have it with chips? I'm a Northerner 🤣

Save it in the fridge or freezer, then use as a base for veg curry. Some boiled eggs would go nicely as well.

Depends on the type of curry sauce, really - a thick, floury one from a jar is a different creature from an oily home made one - if it's the latter I'd chop some mushrooms and cook them in the sauce for a mushroom curry, maybe with some sliced peppers too, possibly pre-cooked aubergine chunks. The former I might add some par-boiled potatoes to, maybe with pre-cooked chunks of carrot and frozen peas?

I'd just make it into chickpea curry. I don't pick the chicken or veg out when I serve up though, I do it evenly so any leftovers wouldn't just be sauce!

It's a home made sauce from one of my older cookbooks, and was delicious.

I've already planned and shopped for a mulligatawny for later in the week too, if only I had known!

I always freeze leftover sauces and gravy (well labelled!) and use them as a base for either soup or another curry/casserole.

I'd freeze it and serve with chicken fried rice at some point.

I always keep leftover curry sauce in the fridge and make toasties with it the next day. It thickens up when it's cold so I spread it on bread like butter and add some chicken pieces and stick it in the toastie machine. Delicious and really handy for lunch!

Freeze it and then when you want it again just fry off some more chicken (or whatever meat you want) and stir it through the sauce. I do this all the time.
