What to cook for dinner for us and toddler- half a cooked chicken to use

Agree with a pasta bake- chuck some veggies in as well and nice as easy! Or a stir fry, chicken & spinach omelette, chicken wraps, chicken with baked potato and veggies, curry...

I am in the same predicament!
I was just going to do mash, boiled carrots and instant gravy (very boring I know.. and presumably you had a roast yesterday so probably not appealing).

Will be watching with interest for better suggestions.

We’re having a very quick chicken casserole in white wine sauce with mushrooms, carrots and peas, maybe some spinach if there’s any left in the garden. Will have it with rice.

Braised lettuce and peas, add the chicken to the broth to heat through. Serve over rice, or with bread.

I've always thought there's something not quite right about a chicken omelette.
To answer the question, chicken risotto with whatever vegs you have lying around, and strip the carcass now and make the stock from the bones

I had some leftover chicken to use the other day - I did a sort of parmagiana thing with aubergine, tinned tomatoes, ricotta and mozzarella. Did a bake at home baguette with it. Made it up on the hoof but was quite lovely!

Chicken curry or chicken pie, mix the chicken with mushrooms and leeks. I cheat and just do a
pastry topping rather than proper pie.

@Ifailed if you mean the chicken and egg combo, I agree! Thought it was just me but serving them together feels weird for reasons I can’t quite explain - never been a veggie or anything but sits weirdly with me...

We did chicken risotto last week including the juices from the roast - divine!!

Other favourites include:
Chicken and mushrooms in creamy sauce (with white wine if desired - alcohol cooks out), served with rice, pasta or potatoes. (Fry an onion, add mushrooms and allow to cook mostly, add cooked chicken allow to heat through. Add splash white wine, reduce by half, add dollop chick stock if need lots of sauce, add decent splash of cream, handful grated parmesan, pepper (may not need salt due to parmesan) - allow to heat through and serve). I've even been known to serve this mix between lasagna sheets or under a pastry crust as a pie. Cheat's quick version of sauce is a tin of Campbell's condensed chicken, or mushroom, or chicken in white wine, soup, but with only a splash of extra liquid.

Chicken curry made with a jar of sauce and served with rice (and readymade puppodums).

Chicken in a (jar of) tomato sauce, possibly with whatever is to hand of: a chopped red or yellow pepper, mushrooms, a sliced onion, garlic, couregette, or just frozen peas, added for extra veg - served with pasta.

Chicken reheated in leftover gravy, with freshly boiled potatoes, and steamed carrots or sugar snap peas. (I've also been known to make a pie out of chicken in gravy).

Part of a nice big Caesar salad with loads of lettuce and parmesan shavings, and a good crusty loaf (to feel substantial enough for DH).

Pasta pesto with chicken.

Spanish omelette/frittata type thing with lots of veg as well.

Nasi goreng (indian fried rice dish with lots of veg and mild curry powder).

Toasted sandwiches.

Either pasta, pesto & either peas or broccoli, or:
Make a white sauce, add in some chicken stock, stir in the chopped chicken. Serve over rice, couscous, pasta or quinoa. Any vegetable you fancy on the side. You could use a tin of condensed soup instead of the white sauce, if you were feeling very lazy.

Chicken fried rice - cooked chicken, spring onions, peas, cooked rice, bit of sesame oil, bit of soy sauce - heat through and add beaten eggs at the end, stir through until cooked. Yum
