What shall I make with my butternut squash?

One butternut squash lurking in the veg drawer. I always end up doing curry with them but I fancy a change. Hit me with your tasty recipes

Roasted with red onion and peppers. Sprinkle with crumbled goats cheese or feta. Drizzle with dollops of caramelised onion chutney and serve on spinach leaves, or rocket.

Almost bought some today but they turn into soup, which is amazing—especially BBC Good Food recipe that contains a bit of red chilli). Alas, not everyone in the family eats it. (#soupphobic).

Roasted butternut squash is lovely!

If you want desserts, butternut squash muffins are amazing.

I make a butternut squash lasagne. Roast the squash with cumin and salt and pepper and then add rocket, red onion, pine nuts and the bechamel sauce in layers with cheese sprinkled on top.

Or you do it as a salad without the lasagne and bechamel. And add feta.

Roast with some garlic, add to a risotto with some spinach and goats cheese

Once cooked, grate some Parmesan On top and add a drizzle of truffle oil
