What's your go-to 'can't think' dinner or tea?

Would love some more ideas especially when I've had a day of it and baby brain.

Mine are:

  • Jar of pesto and pasta (with salad if have any leftover in fridge)
  • Baked potato with beans and/or cheese (again some salad)
  • Dig out some leftovers from the freezer e.g. batch cooked curry
  • Quorn escalopes with some frozen veg

Spaghetti with tomato sauce and whatever is in the fridge! There's always onions, garlic, and some random veg, often chorizo or bacon too.

Stir fry same principle but with rice or noodles.

Otherwise freezer leftovers, beans on jacket potatoes, or takeaway Grin

Spicy chickpeas. Can of chickpeas drained and rinsed fried in olive oil with cumin (or garam masala), chilli powder, ground coriander till golden, add tomato quarters, cook a couple of minutes, splash with lemon juice, season with salt and pepper and serve with broccoli or other available vegetables.

Jarganara (fake carbanara) Spaghetti or pasta mixed with olive oil, milk, two cheese triangles, cut up ham a squeeze of mustard and some fake packet parmasan.

alioli tuna pasta - few glubs of olive oil in pan, ready minced garlic fried for a few seconds, then a bit of mayo. Stir in a can of tuna. Add to any boiled pasta (we tend to go for penne). Served with peas.

Soup and fresh baked baguette (they come in the frozen section - so good!) maybe with some cheese. Soup is typically from frozen. Just defrost in microwave.

Spaghetti puttanesca, store cupboard ingredients but tastes restaurant worthy. Takes 20 mins (that includes bringing the pasta water to the boil)

Buffet style tea - put wraps/bread on the table with any salad bits, cheese, ham, leftovers & pickles.

Any type of Yorkshire Provender soup and sourdough bread . Bliss . ( especially the cauliflower one !!!)

Grain and pseudo grain bake ( I don't call it that of course)
So freekah, pearl barley, Quinoa or anythin like that cooked.
Fry things like onions, celery, leeks, garlic add the grain to the veg, stir through add a soft cheeses, stir through and bake. Lots of other stuff you could do that. Add spring onions at the end, put breadcrumbs on while it bakes.i use what ever us in,sweetcorn, pomegranate seeds, anything really.
Stirfry is my go to as well. Takes minutes to make different styles of sauces but i tend to do satay.
Pearl barley tofu and ginger is another fav.
One for tonight that I'm making is home made pot noodle because I am so tired and can't be arsed cooking a lit!

Puttanesca. Takes no time at all.

Cheat's Mac Cheese - cook the macaroni in very little water, just enough to cover it. Don't drain it because that tiny amount of remaining water will be starchy. Put in a hundredweight (ok, quite a lot) of grated cheese, a dollop of butter and stir. Add splashes of milk as needed to slacken the sauce.
One pot, 8 minutes.

Diced chicken breast or nuggets in a tortilla wrap with lettuce, grated cheese, salsa & sour cream or mayonaise.

Quick "pizza" made with part baked baguettes. Slice & bake the baguettes for 3 minutes short of stated time. Spread with tomato puree, grated cheese & any other bits you fancy. Put back in the oven for 3/4 minutes.
