What's your go-to 'can't think' dinner or tea?

Would love some more ideas especially when I've had a day of it and baby brain.

Mine are:

  • Jar of pesto and pasta (with salad if have any leftover in fridge)
  • Baked potato with beans and/or cheese (again some salad)
  • Dig out some leftovers from the freezer e.g. batch cooked curry
  • Quorn escalopes with some frozen veg

I like the fried chickpeas recipe. Planning to give that a go asap.
Here it's omelette and peas if I really cba, but I always have frozen leftovers (casserole/curry) in freezer.
At a push it's tinned something and rice.

Omelette or whatever is in the fridge fried rice. We have fried rice quite a lot, easy with leftover meat and veg with a packet of pre cooked rice.

1 tin of stewed steak
2 tins of Heinz veg soup
1 tin of carrots

Lob into a casserole dish and mix for instant stew in under a minute... while it's warming up, microwave some jacket potatoes, finish in the oven and serve with grated cheese. Yum.

Spaghetti puttanesca, store cupboard ingredients but tastes restaurant worthy. Takes 20 mins (that includes bringing the pasta water to the boil)
Ditto and I'd describe it the same too!

I also make mumsnet one pot pasta frequently. I'm slightly less likely to have the ingredients in. Puttanesca really is store cupboard deliciousness

An omelette or egg mayo salad. Eggs are so easy and I always have some so they're always my go to when I really can't be bothered

Groundnut stew. Chop on anion and fry in a tablespoon of oil. When soft, add two tins of chopped tomatoes, chopped scotch bonnet/habanero pepper and about three heaped tablespoons peanut butter. Stir in the peanut butter - it needs to be quite thick - then add two tins of butter beans or haricot beans. Heat through and serve with rice.

Honestly, usually takeaway. But thats cos im the only one who can be bothered to cook so if i dont, we have takeaway lol.

The other day, though, i made an omelette with leftover sausages and roast potatoes, plus sweet pepper, onion and tomatoes. 🤤

Some kind of eggs and toast. We have our own chickens and the eggs are delicious and always available.

Spaghetti with tomato sauce and whatever is in the fridge! There's always onions, garlic, and some random veg, often chorizo or bacon too.

Stir fry same principle but with rice or noodles.

Otherwise freezer leftovers, beans on jacket potatoes, or takeaway Grin

what sauce do you use for the stir-fry? Do you make your own or have a batch?

Cook tagliatelle, while it's doing fry some bacon, add sliced onion and chilli, chuck in tinned cherry tomatoes for a few minutes at the end. Stir through the pasta. Less than 30 minutes, two pans, and always enjoyed!

Frittata with whatever I have to go in it. Spring onions, spinach, mushrooms, tomatoes, peppers, courgette, smoked salmon etc. More of a lunch though.
Or pasta with cream cheese, horseradish, peas and smoked fish. yum!

Burritos. I always have tortilla wraps in the freezer, rice in the cupboard and chipotle sauce in the fridge. I roast some chicken thighs if I have any, or fry some onions, peppers, tomatoes etc and chuck in some chorizo, tuna, salami or whatever. Bung in wraps with cooked rice, cheese, spicy sauce, mashed avocado if I have any. Yum.

Pasta and Homemade sauce.
Sausage and Mash - Frozen Veg.
Wraps with salad, cheese, ham, chicken etc.
Cheese on Toast.
Soup.
Cheese and crackers.

It's very rare I eat a hot meal every day.
Not a big appetite anymore.

Kids love a Fish finger sandwich!

Carbonara- always have the ingredients in. Or IKEA meatballs with pasta / potatoes depending on what we fancy.

@MangoM You forgot 'cheese-and-beans on toast'.

Thick slice of wholemeal bread, topped with beans like molten lava, covered with hand-cut slices of cheese, melted to seal in all the beans. Admire. Cut. Eat carefully, avoiding scalds.
