Birthday gift for 30th birthday

DD1 will be 30 in December!!!!
I need a special present but it’s tricky as she has some mental health problems, still lives at home with us, is single,doesn’t like being in large crowds, doesn’t do make up, fashion, clubbing, girls nights outs etc.

She does love horse riding and anything to do with outdoors . I’m thinking a weekend away with her best friend somewhere luxury, with maybe a hack thrown in. any ideas? We are in Scotland and best friend in Derby so maybe mid way? (But that’s not a deal breaker)
any other ideas gratefully received. December isn’t a good time so maybe a voucher for the above?
What else might work?

Might be a bit 'out there', but a friend of mine recently got a kayak for her birthday and loves it.

She loves bees so did wonder about a bee keeping course and then maybe a hive if she was keen
