What is the attraction to cauliflower?

I have tried it on occasion but its bland.
The last time I had cauliflower cheese was when I was a kid and promptly threw it back up. Cheese sauce is fine.
I've also discovered that Branston pickle has cauliflower in and so does piccalilli, obviously. Maybe thats why I dont like those particular pickles.

I love cauliflower cheese (although that might be more about the cheese) ....but recently cauliflower seems to gave become a substitute for virtually anything - cauliflower rice, cauliflower mash replacing carbs, or cauliflower "steak" replacing meat...Confused (wonder if cauliflower steak with cauliflower mash has appeared on a menu yet??) but the worst abomination is a cauliflower pizza base!!!

I’m a fan of cauli any which way it comes. For those that don’t like cauliflower cheese try cheesey leeks - in my opinion even better than cauliflower.

Clearly my childhood was bland.Grin
My mum used to do leeks in a white sauce. Slimy leeks.🤢

One of my favourite vegetarian dishes is cheesy leek sauce poured over cauliflower and roasted. Love it.

My mum used to boil cauliflower until it was soft then mash it with tons of butter and salt and pepper. It was divine if not very healthy!

DS1 loves plain boiled cauliflower, but hates carrots. I like both but I imagine most people think carrots are nicer.

Raw cauliflower is great; try it with hummus, instead of carrot sticks.

Cauliflower cheese is better with mustard in the sauce (grainy, for preference) . I agree with previous poster that a crunchy topping - eg breadcrumbs - is also a good idea.

Broccoli cheese - or 'mornay' - can be very good so long as the broccoli is not over-cooked. It's better if the sauce is the sort of melted cheese and egg mixture that is used to make Welsh Rarebit, not a flour-based sauce. Broccoli - again, still crisp and not overcooked - is very nice with Boursin or Roule (can't do accents) garlic and herb soft cheese melted on top.

Cauliflower has no nice flavour I agree. I thought with greens it was to help with going to the toilet regularly.

Brussels sprouts taste bitter to me. I have the super taster gene, also hate coriander and most green veg tastes horrible. Most boring superpower ever but at least I know I’m not just picky as my mum used to shout at me about not eating veg. I now eat veg but ones I like.

Although as somebody who figures out how much 100g feels like it weigh by comparing it to half a large bar of Dairy Milk, I fear I may be a lost cause...Grin

Both me and dh love Brussels sprouts so we have it very often. My ds on the other hand wasn't keen. One day we found out Brussels sprouts were the only veg that contained every single vitamins and minerals on the library poster. He decided to eat them because it's the best veg ever Grin
Sometimes facts are strong enough to change children's view of food.

I usually put a bit of chili powder in too, tge other night I couldn't find the chili powder jar, so I Just opened a new one...the top was different & I ended up with loads in it AND it was Curry Powder. 🤦🏻‍♀️ I wasn't sure what curried cheese sauce was going to be like, but it was actually really, really good!!

I'm a low carb vegetarian. I eat a LOT of Cauliflower. Good job I love it!

Brussels Sprouts are the best!

Waitrose (I'm sure other places do too, but I've never seen them!) do baby BS, they're even lovelier.

I'll eat them anyway, but I love them roasted in a bit of olive oil 😋

Miguel Barclay's cauli three ways is delicious, roasting the leaves is a game changer.

Also coat in buffalo sauce and deep fry until golden. What a treat.

Ooh I haven't tried roasted cauliflower so will deffo try that!

I hated cauliflower rice but have learnt a new trick that if I fry it dry with a bit of paprika and pepper it is delicious and much better texture!
I hated that wet, soggy texture

My DM never cooked cauliflower and neither did I till a couple of weeks ago and now I just cant get enough of it. I like it best roasted.

Cauliflower cheese is a favourite in this house, but so often it’s dire anywhere else because

a) people are stingy with cheese in the sauce, or use mild Cheddar instead of the good strong stuff. Often both.

b) they omit the essential salt, pepper and a good dollop of English mustard

c) they overcook the cauliflower or don’t drain it properly, so that it makes the sauce watery. Often both.

And as a pp said, breadcrumbs and extra cheese on top and browned under the grill is even better.

We also really like it (cooked al dente) in a vegetable curry.
Not to mention in a thick, non-puréed, multi-veg soup, a staple in this house in winter, with grated cheese on top.😋

Cauliflower is one of my favourite things. Absorbs all Indian flavourings when Roasted. Great as Main component of a curry with chickpeas and sweet potatoes. Love it as a burger. I use it a lot.

It is delicious roasted with some quarters of lemon so that it caramelises lightly on the edges and served with the lemon squeezed over it, and some tahini. And I recently had a very good restaurant dish of grilled cauliflower with a cashew korma sauce and mustardy spinach.

I think it should never go near water.

I see I've found my people.

My favorite way to do cauliflower. Fry lots of thinly sliced onions with garlic slowly for ages. Add cauliflower florets and fry on high till they start to burn on the edges. Turn down, add mustard seeds and a bit of curry paste, put a lid on, cook till the texture is just right.
