Too many veggies! Messed up my grocery order help needed

Gah! I’ve cocked up my grocery order and I now have that needs used up in the next week:

12 salad tomatoes
2 packs cherry tomatoes
2 large packs mozzarella
6 sweet peppers
2.5 cucumbers

And it’s only me here!

I don’t have a blender or slow cooker at the moment and very little space in freezer!

So...hit me with some ideas please?

All I can think of is:

Chunky soup - due to no blender, have to admit I’m not a big fan of this kind of soup but maybe you can persuade me with a great recipe?

Ratatouille

Having tomato and mozzarella on toast every day for lunch!

Minds gone blank!

Tried googling but it’s mainly pasta sauce and similar which I don’t really fancy

Can you cook cucumber?? No idea what to do with that!

Admittedly we eat this alongside grilled meat, but buy some red onions and try Kachumber salad.

I slow roast iffy/elderly tomato's with olive oil and garlic and then blitz them (a potato masher might work). Then I throw in some black beans (maybe a bit of Worcester sauce/ketchup) for fancy baked beans.

Cucumber? Tabbouleh (or a version of it!)
Cooked bukghar wheat, cooled.
Finely dice cucumber, spring onions, flat leaf parsley, mint, salt, pepper, glug of olive oil. You could even dice some of the tomatoes into it.

Cheap hand blender is a great yoke to have for blitzing.

I would quarter the tomatoes and squeeze out excess water.
Add chopped garlic and peppers.
Slow roast in the oven.
Eat on toast topped with cheese. Heavenly.
Bag in small amounts for freezer.
I love cucumber sandwiches.

Pickle one of the cucumbers. Just in a jar covered with white vinegar and Dill if you have some. Takes a week or two to be ready

I've been wanting to get a blender again for ages but lockdown has made it difficult to get deliveries.

I tried ordering through supermarket a few times but was always out of stock! But that was at height of lockdown when everyone was rediscovering cooking so might be possible now might try for next weeks delivery.

Some fabulous ideas thank you definitely trying cooking cucumber

Sweet cucumber relish will be lovely with cottage cheese. Lots of recipes .

Pickle the cucumbers and keep in the fridge for weeks. Eat like gherkins.
