Love courgettes.
The wet bit is all the seeds in the middle so I always cut/scoop them out then you can do more or less anything with them.

I use sugar free peanut butter instead of the other nut butter and golden syrup instead of maple to save money!

Courgette fritters - grate, squeeze out the water in a tea towel, add egg, small amount of flour and some Parmesan or other cheese then fry tablespoon full

I love the marinated courgette recipe in this article, I didn’t do the freekeh as I didn’t have any, but the courgettes were delicious with a salad.

Chop it up into chunks and stir fry it with chopped peppers, mushrooms, cauliflower florets and add some oyster sauce just before serving.

Scoop out seeds, fill with chopped tomatoes, herbs, cover in cheese and bake. Its amazing!! So simple
