Anyone with easy dinner ideas for this heat? Salads/combinations/quick cook teas for a heatwave?!

Thought it might be good to share ideas for quick dinners easily assembled in this heat.

Last night we had such a good salad - melon slices, Parma ham, sliced mozzarella, cold blanched green beans with honey and mustard dressing, all lied on a bed of crispy lettuce, on a salad platter thingy. Kids loved it, cold, refreshing. With toasted pitta on side.

Tonight I'm doing tandoori lamb (marinaded in yogurt, garlic, ginger and spices) grilled, with garlic naans and salad/sliced onion/tomato. (Less points for this in the heat as it requires the oven on for naans!)

Anyone got any other meals they turn to when it's boiling?

Lastnight was chinese home delivery!

Lunch today was watermelon salad. Watermelon cubed, browned/fried halloumi cubed, toasted pinenuts and green beans. Thats it and utterly delicious.
