Budget Healthy Meals

Hiya. Looking to save a bit of money over next couple of weeks on food shopping as we have an expensive month coming up.

What is your go to budget Healthy meal? Ideally including meat to please my dh. There are three of us. Me, dh and dd 13 who is skinny but has a good appetite.

Lentil Dahl curry with chicken

Risotto With veg and frozen prawns

Pasta with chopped chorizo ring, can chopped tomatoes, onion, garlic, frozen peas/sweet corn

Precooked peppered mackerel fillets with roast veg or salad

Shepherds pie - if you add a tin of lentils to the mince you double the filling for very little cost and retain the meaty flavour and texture. Make it healthier by having a root veg mash (swede, carrot and celeriac for me) topping.

You can make anything cheaper with a tin of lentils added to double the volume.
