Which ac unit should I get?

Big kitchen diner with sliding windows so it needs to work without venting. Or tell me your solution?

I’m about to bring a fan down and put a bowl of iced water in front of it Hmm

Not fussed about price if it works!!!

You literally can't get an air conditioning unit that doesn't vent. They work by pulling air out and pushing refrigerated air from outside back in.

We use a window seal on ours it's just a skirting that velcros to the frame and you can vent through,.you can make one yourself or buy one. In terms of what unit to buy just look at the coverage they're all noisey and big!

This country is getting so hot people are going to have to start getting central air con soon!!

There are units which are termed ventless... it just seems to mean they have to be vented through a window so presumably not what you want.
The heat has to go somewhere other than the room you're cooling.

So what do you do about security?

It will show that the window is open at the front of the house and I am not sure how I would catproof to keep the cat from getting out of the doors are 21/2 metres high??

Mine is only ever on when I am in and usually only at night although we have it on now with additional fans circulating air through the house as it's so bloody hot.

Shutters. A lot more secure than windows anyway (and effective at blocking out light). Do make your house look like a prison though. (We had shutters on our houses in Cyprus band Germany, and I've come to realise how sensible they are).

We've got a properly installed Mitsubishi heat pump in the main bedroom. The main unit is mounted on the wall outside (it might not be allowed on the front of a house), hole through the wall. It's an incredibly efficient means of heating the room in winter so we can run the central heating lower, but it can pump the other way round (less efficiently) and can be used as AC. Chances are this wouldn't be appropriate for what the OP describes but there are situations where it might work. (Obviously that's not a cheap option)

One secure way of venting with a hose - not sure if this would work with sliding windows - is via a cat flap. When we had our side garage door replaced, we got one with a cat flap purely so we could put the tumble dryer hose out through it instead of having to leave the door ajar.
