What dinners do you plan to have this coming week?

I need inspiration! Our veg box has arrived so that will be the base for meals this week, but I need a few new ideas.

We have a lot of courgettes so recipes where they feature would be particularly appreciated!

What is on your dinner menu for the week?

Carluccio courgette pasta - really good and easy. Even courgette refusers like it!

Courgette and feta fritters are nice.

Today: lamb stew cooked in red wine for the carnivores. Homemade paprika wedges, tsatziki, salad, roasted cauliflower and baby courgettes.

Tomorrow - a sort of lazy Sunday dinner type meal, with roast vege, nut cutlets, shop bought cauliflower cheese, stuffing.

In the next few days I've got the stuff to make -

  • veggie lasagne
  • 'something' and oven chips - fishfingers, omelette, fried egg, freezer crap
  • dhal and rice
  • some sort of pasta sauce or ratatouille or something
  • various tins of beans, chickpeas etc to turn into a chilli or a curry or something of that ilk
  • veggie sausages

We get Hello Fresh 4 nights a week so we are having:
Mango prawns with rice
Lamb and chickpea stew - with charred courgette
Hot smoked salmon with orzo - also with courgette
Mushroom pasanda (tbh could probably put courgette in that too)

And then we're going away for the weekend so we'll be eating out every night and may have courgette at some point Grin

I made a vat of courgette soup this morning so that's lunches sorted.

For dinners:
Monday; Caprese followed by Pasta and meatballs ( sauce made in slow cooker this weekend.)
TuesdayChopped salad: basically all the veggies cubed with cooked newps, some fusilli, chopped chicken if I have some cooked, chopped feta. All in a big dish and everyone dresses it on their own plate. Youngest is supposed to be making some onion bread this week so if she does it on Tuesday we'll have it with the salad.
Weds; shepherds pie or fish pie. Not sure which but I made a lot of colcannon at the weekend to use up the sack of spuds before the last ones went soft so it will need to be used to top something! Served with courgettes if I can't get them inside.
Thurs; roasted chicken thighs with summer veg ( leeks, peas, spring onions, green beans, broccoli , courgette).
Fri: I have minced lamb and aubergines so either koftas with babaganoush or a mini moussaka.
Sat: chicken, spinach and mushroom curry with flatbreads and rice. I'll sneak in a courgette bhaji if I can to save having to make more soup.
Sunday: something fishy. I have some cod loins and a side of salmon in the freezer: the potato man is bringing 7.5kg of newps on Friday and the mint is running amok so it might have to be some kind of fish with buttered minted newps and spinach.

Bolognese in the slow cooker.

Pie and mash.

Chilli con carne.

Nachos with leftover chilli.

Lamb roast.

Stew the leftover lamb roast.

Risotto.

Although I would happily eat courgettes sliced on a mandolin / potato peeler and gently fried in a ton of butter with pretty much anything!

We plan to have :
Chicken and Leek pie
Chicken Noodles
Saffron Cod with White bean mash
Tomato and chickpea curry.

Courgette ideas:
Slice 1 Cm thickness length ways.
Griddle or BBq.
Dress with lemon, Extra V Oil and Parmesan with a sprinkle of salt flakes.
Or
Soften in pan with onions, garlic, add fresh or tinned tomatoes, oregano, chilli flakes and stock of your choice. Cool for 15 minutes and then blend to smooth.

Nothing featuring courgettes here unfortunately although I love them. We are having an uninspiring week as DH working late and we are trying to go through the freezer.

Sausage pasta (baby’s favourite!)
Pork chops, jacket pots and broccoli
Greek chicken wraps, salad
Quiche, new pots, salad
Fish and oven chips, mushy peas
Steak with some sort of potato and veg
Bolognese type pasta with veal mince

Courgette soup recipe as I'd missed you asked for recipes particularly. This freezes really well.
Wash, top and tail your courgettes. Weigh up the amount you want to use. These are the proportions for a kg of courgette but adapt up and down a required.
For 1 kg of courgette; do not season until the end
Add 500g of peeled chopped potato to a pan with just enough water to cover. Bring to the boil, add lid and cook for 10 minutes until soft. Add 1 kg of chopped courgette. Replace lid and cook for 6 minutes until soft. Blitz until smooth. Add 400g of grated mature cheddar. Blitz until smooth. Add lots of salt and pepper to taste. At the point it tastes ok but nothing special, add a bunch of finely chopped spring onion and a sprinkle of nutmeg; blitz serve with a sprinkle of pepper and nutmeg and/or some chopped spring onion. Even the courgette dislikers in our family love this!

My favourite salad: grated courgette and grated carrot: mix well. Dress immediately before serving with a little olive oil and a good squeeze of lemon juice.

courgette I use a lot.
pasta "sauce " which is grated and squeezed dry courgettes, chilli, loads of grated garlic , a little nutmeg, and some grated Italian hard cheese.
fry together and then add to cooked pasta.
I stir through some finely chopped spinach. lots of s and p
and serve

There are 2 sorts one is like bread and the other which I like is like a baked frittata have a Google.

We've used up some of our courgettes in veg box tonight by griddlng them with some bbq'd lamb... otherwise I'd have used them in either Rachel Roddy's courgette pasta recipe www.theguardian.com/lifeandstyle/2016/jul/19/pasta-with-courgettes-breadcrumbs-and-almonds-recipe-rachel-roddy-a-kitchen-in-rome. Or in Thomasina Miers courgette/sweetcorn taco

We have left over turnips from last weeks veg box so tomorrow night we're doing harrissa root veg (turnips, sweet potatoes, purple carrots) with couscous

Tuesday - probably Ben Ben noodles to dent our mushrooms

Friday - that will probably depend on whats left as veg box and shopping arrive again on Friday!

One of my favourite summer soups is courgette and pasta. It’s a Mitsides recipe that uses any soup pasta and grated courgette, so it cooks very quickly, in about 15 minutes, and it keeps its lovely bright colour and fresh summer taste.

Ratatouille is always a useful thing to make with courgettes, so versatile, with pasta or rice, as a hot or cold accompaniment, topped with grilled cheese for lunch, as a base for baked fish.

I’ve not planned meals far ahead for this week, there’s only me, so I can just please myself. Tomorrow is Parma ham and white asparagus salad , and one day I will have a fish stew, on another gazpacho.

Today we had: Roast Beef, Yorkshire Puddings, roast potatoes & veg
Monday: Sizzling Steak Stirfry
Tuesday: Chilli Con Carne
Wednesday: Take Away
Thursday: Chicken, Chorizo & Tomato Pasta Bake
Friday: Spicy Coconut Chicken Curry Casserole

It's a beef-heavy week, not usually like that but just the way it happened this week.

We are hoping to eat out for half price at least twice next week but batch cooked yesterday

Spag Bol (I am low carbing so will have with courgette which I have already spiralized and frozen mixed in with tenderstem broccoli

Chilli (again I will have with courgetti instead of rice

Hairy bikers old fashioned chicken stew

Pasta bake with cherry tomatoes, 3 cheeses and courgette

Sausage meat risotto with mushrooms

Italian meatballs with shop bought tomato and chilli sauce (arrabiata?)
