Can I have your non boring salads please!

I need to live on salad for a while while I’m getting fit. My salads are always boring but I’ve just made a really nice warm goats cheese on with walnuts and fish and I need more ideas like this please!

Baby Spinach Salad with Dates + Almonds

(Courtesy ofJerusalem: A Cookbookby Yotam Ottolenghi and Sami Tamimi)

Yields 4 to 6 servings

Ingredients

1 tablespoon wine vinegar

1/2 medium red onion, thinly sliced

3 1/2 ounces dates (100 grams), preferably Medjool, pitted and quartered lengthwise (add more if you're so inclined)

Salt

2 tablespoons unsalted butter (30 grams)

2 tablespoons olive oil, divided

2 small pitas (about 3 1/2 ounces, or 100 grams), roughly torn into 1 1/2 -inch pieces

1/2 cup whole unsalted almonds (75 grams), coarsely chopped (I used slivered almonds and added them to the pan with the pita for about 1 minute.)

2 teaspoons sumac

1/2 teaspoon chile flakes

5 to 6 ounces baby spinach leaves (150 grams)

2 tablespoons freshly squeezed lemon juice

Preparation

·Put vinegar, onion and dates in a small bowl. Add a pinch of salt and mix well with your hands. Leave to marinate for 20 minutes, then drain any residual vinegar and discard. (It didn't have any residual liquid.)

·

Meanwhile, heat butter and 1 tablespoon olive oil in a medium frying pan over medium heat. Add pita and cook for 4 to 6 minutes, stirring all the time, until pita is golden. Add almonds and continue cooking until pita is crunchy and browned and almonds are toasted and fragrant, about 2 minutes more. Remove from heat and mix in sumac, chile flakes and 1/4 teaspoon salt. Set aside to cool.·

When ready to serve, toss spinach leaves with pita mix in a large mixing bowl. Add dates and red onion, remaining 1 tablespoon olive oil, the lemon juice and another pinch of salt. Taste for seasoning and serve immediately.

It depends how far you push the definition, but roasted veg (squash, beetroot, carrots) are always good. I do them with those precooked grains pouches (for fibre & complex carbs) and halloumi/feta for a bite!

Slightly off topic but eating salads isn't going to help you get fit.

I've been at my fittest and best looking when I've avoided 'salad' as a dietary tool and eaten a tasty high protein diet with lots of fruit and veg alongside regular but gentle exercise.

steak or chicken with lemon, salt, garlic, olive oil, tomatoes, sliced onion and a bit of rocket for example. Delicious.

Don't fall into the trap of thinking salad = healthy.

Watermelon and feta is lovely!

Can't beat amazing buffalo mozzarella, tomato, fresh basil.

Butternut squash roasted works great in a salad. As does spiced cauliflower.

Black beans, coriander, tomatoes, avocado and loads of lime.

Whenever I made a salad with tomatoes I always leave them out fridge to bring to room temp then I add them first and salt really welly. I then layer up from there and it makes it so tasty!

Grilled ciabatta or one that's a bit stale also works great in a salad.

I love salads if you can't tell!!!

Feta cheese and olive oil livens up anything salad related. Also love walnuts, can you share your fig & walnut recipe please?

Here's a few I like:
Apple, walnut and feta
Tuna Nicoise
Mozzarella, Parma ham, peach and pine nuts
Pear, Stilton and walnut

Not sure how healthy they are as they mostly contain cheese!

@Nackajory it was something I made up as I went along! But it was:
Spinach leaves
Beetroot
Sliced gherkins
Olives
Celery
Cucumber
Vine tomatoes
Walnuts
Roasted figs
Roasted chantenay carrots
Grilled goats cheese
Handful of pomegranate seeds
Garlic oil

I hate Dressings so I never put anything like that on it.

I love Wensleydale with apricot or cranberry (from Asda) rocket cherry tomatoes and grapes with balsamic dressing
Falafel with watercress humous and pomegranate seeds

This is as close to my favourite as I can make myself. (Originally is from Central Market - grocery store in TX) This is the closest recipe I can find to recreate it.

Also google “Avoca salad recipes” and you’ll come up with some brilliant recipes. Avoca salads are a food group in themselves - I would eat them every day if I could. There is also an Avoca salads cookbook (it’s a wee one - costs less than £10) which is a go-to in my house

Waldorf salad, celery, apple, walnuts, black grapes or raisins, on crispy leaves, dress with mayonnaise or Greek yoghurt if liked. Especially good with smoked mackerel fillets added, making it a substantial meal.

Chicken Caesar salad.

Salade Niçoise, tinned tuna, hard boiled eggs, cold new potatoes, tomatoes, green beans, lettuce, anchovies and black olives, will keep you going all day!

Puy lentil salad, use tinned lentils for ease, add red salad onion finely chopped, grated carrot, pine nuts, finely diced boiled beetroot. Very good with ham or salami.

Caesar salad with Cajun prawns.

Romaine lettuce
Parmesan shavings
Caesar dressing
Raw
Cashew nuts
Raw king prawns
Drizzle of oil
Cajun spice

Heat non-stick frying pan. Toast cashews and remove from pan. Drizzle prawns with oil. Sprinkle over Cajun spice and mix to coat. Chuck the prawns into pan and cook through.

Assemble salad. Lettuce, dressing, cheese, cashews and finally the prawns. Amazing.

Lemon couscous from Sainsbury with chopped apricot pieces, pomegranate, cucumber - add cubed feta if you like
