I need to live on salad for a while while I’m getting fit. My salads are always boring but I’ve just made a really nice warm goats cheese on with walnuts and fish and I need more ideas like this please!

Sliced tasty tomatoes covering a plate, scatter with chickpeas, drizzle olive oil and season, top with slices of pan fried halloumi (coated in cornflour is extra tasty or just plain). Yum.

There is one from a diet book I used to make and still enjoy when I remember. Brown nice, tuna, carrot thinly sliced, spring onions and beansprouts. Tossed with olive oil and I think either lemon juice or balsamic. Really filling.

Anything that involves pomegranate and feta! I usually have them with olives, leaves of some variety, cucumber, some kind of protein, and dress with yoghurt and mint.

AriettyHomily · 02/08/2020 21:58

Can't beat a Greek salad with lots of lemon and feta

Viletta · 02/08/2020 22:16

I have the following ingredients in various combinations on top of salad leaves, tomatoes and cucumbers,

Tuna, eggs, artichokes and salad leaves

Sun dried tomatoes, reddish, beans, gherkins, parma ham, mozzarella, seeds, nuts, good olive oil

Thesuzle · 02/08/2020 22:18

Finely grated carrots, toasted pine nuts and sultanas with white balsamic and olive oil stirred through, perhaps a bit of salt and pepper

monkeyonthetable · 02/08/2020 22:21

I made one the other day that was gorgeous. Watermelon, fresh mint, feta and iceberg. Could have added black olives and spring onions but DH wanted it as it was.

Baby spinach, crispy bacon or lardons, toasted walnuts and avocado is good.

Baby plum tomatoes with fresh thyme and sea salt. Nothing else. Unbelievably nice and v low calorie. you can add olive oil and balsamic if you like but just tomatoes and fresh thyme are brilliant.

Fennel, sliced wafer thin with sliced blood oranges (or ordinary ones) fresh mint, olive oil and fresh lemon juice

mamakoukla · 02/08/2020 22:26

Baby spinach, feta, dried cranberries, toasted almond slivers dressed with olive oil

Dobbieslovechild · 02/08/2020 22:31

Lying in bed drooling(and making a shopping list!)

Babyvibe · 02/08/2020 23:16

I don't have any suggestions as my salads are also very boring and I need inspiration. I'm definitely going to be trying some of these suggestions!

@pastabest

Slightly off topic but eating salads isn't going to help you get fit.

I've been at my fittest and best looking when I've avoided 'salad' as a dietary tool and eaten a tasty high protein diet with lots of fruit and veg alongside regular but gentle exercise.

steak or chicken with lemon, salt, garlic, olive oil, tomatoes, sliced onion and a bit of rocket for example. Delicious.

Don't fall into the trap of thinking salad = healthy.

This. You could eat nutritionally identical foods by eating normal meals, soups, stews, traybakes etc made from protein sources, fruit, veg, pulses etc.

No need to 'live on salad while you get fit' at all.

sergeilavrov · 03/08/2020 03:45

Fattoush, with the pomegranate and pita chips (maybe there is a healthy alternative?) has to be the GOAT salad.

Tabbouleh is very healthy. I freeze a block of feta for 15 minutes then grate over Israeli salad too, takes on the best texture

mrbob · 03/08/2020 04:06

Salad isn’t necessarily low calorie but it IS generally good for you because there will be vegetable in it and a selection of Good vitamins etc. Healthy doesn’t have to be fat and carb free.

sashh · 03/08/2020 04:41

I make a 'red salad', beetroot, orange segments, radicchio, radishes, red cabbage etc.

Experiment with different dressings.

You can also make soup from salad ingredients.

fuzzymoon · 03/08/2020 05:18

Dress a salad with

Bacon - rind cut off and cut up into inch squares.
Creme fraiche low fat with a small piece of Stilton crumbled in it.

Oblomov20 · 03/08/2020 05:30

Do love a good salad.

Grumpbum123 · 03/08/2020 08:45

Check out the book a salad for all seasons

hopeishere · 03/08/2020 18:09

Place marking for inspiration!

monkeyonthetable · 03/08/2020 22:17

@sashh - I like the sound of that red salad.

EmmaStone · 03/08/2020 23:42

I love a cobb salad.

Also often make a quinoa salad with peas and broad beans with feta, some chopped spring onions, maybe some coriander torn in.

I've pretty much always got in my fridge in summer to rustle salad up: lettuce (love red gem), tomatoes, avocados, celery, artichoke hearts, radishes, maybe some raw cauliflower or sugar snap peas. DH likes some cubed carrot, it I'm less keen. Maybe some feta or goats cheese, or a dollop of hummus. Maybe a hard boiled egg sliced up too if I've been organised.

PickAChew · 03/08/2020 23:44

Love this one with raw beetroot

Mine has thinly sliced gherkins, carrot strips (vegetable peeler), tinned sweet corn, mini potatoes etc.
