I have a really simple question..... If you have a fit bit or similar, does it track your movements if you're not near your phone then sync to your phone when back in range?

Yes.
You use your watch all day and only when you open your app does it sync all your data.
I have a Garmin. I only bother to sync it if I’ve been for a run.

So if I keep it on but leave the phone in the car or on my desk it'll still track? Sorry, I can't find a straight answer anywhere lol

Yes it will store the activity on the watch and then when you sync it to the phone, all the data will transfer to the app.

Some watches only store the info for a certain period of time, so if you don't sync for a week or whatever, the info will be lost.

Yes it will still track, even if you have Bluetooth off all day on your phone. When you turn on the Bluetooth it will then sync with the Fitbit and show your step activity.

Most of them have a screen where you can see the up to date tracking and it syncs when you open the app.
