Help!
What do you eat if you don't eat bread for lunch? I am eating the same old boring sandwiches or crackers every day for lunch and I need new ideas/inspiration please.

Well im low carbing so i have salad or omelette or even lettuce wraps but if you want to eat starched then couscous, pasta, rice and corn cakes, ruce, noodles, different types of bread ie pita, sourdough, seeded, rolls, baguette, bagel, buns, wrap etc.

SweepTheHalls · 25/07/2020 09:38

Soup?

jjejj · 25/07/2020 09:39

I am trying to reduce carbs I also have issues with eggs 🙈 they give me a really bad stomach ache. Will get some lettuce for wraps that's a good idea

The problem with soup is that I always want bread 😂 I'm not sure it fills me up either and I don't particularly eat massive portions for lunch

You can make low carb bread using ground almond which i buy from lidl or aldi. I cook it in a mug in the.microwave, slice and toast. Loads of recipes on google 'keto almond bread'
Its so good. I add garlic powder and or mixed herbes and eat it with cream cheese or cook it plain and eat it with almond smooth butter or salted butter and cinnamon with creamy coffee. Yuuummmm

Ok another idea is like a bento lunch box, chopped cucumber, avocado, olives, salami, chicken, cheese, nuts and if you like quavers there are puffed pork scratchings that taste nothing like horrid mr porkys.. these r called the curators and available in big sainsburys and on amazon.
If your carb threshold is higher there is expensive low carb bread..i think waitrose sell it? Berries with double cream and dessicated coconuts 😍

Halloumi stacks with tomatoes, cucumber, avocado wrapped in a lettuce or on own secured with a stick.

Also melt shredded cheese in the microwave or in the oven on a non stick sheet. If you do little mountains of them they melt in circle ish shape which you can eat as chips or dip in guacamole etc.
In my third week of keto i lost my appetite so just ate a handful of nuts for lunch or a pepperami...

I struggle with this, too. I love cold noodle/pasta salads. Couscous. Rice-based meals. Jacket potatoes.

Shannith · 25/07/2020 10:02

Iceberg lettuce wraps are excellent- really.

I low carb and basically eat the most delicious full fat sandwiches ever, just between 3 massive lettuce leaves.

Bonus is the filling stays put if you kind of wrap then around it and you can really taste the filling.

Bacon, avocado, diced tomato and mayo for lunch today.

Shannith · 25/07/2020 10:03

Also I love bread so, so much but I look pregnant when I eat it. I now actually prefer my "sandwiches" this way.

Thank you, going shopping today so will use lots of these ideas for lunch. I think when I get used to not eating bread everyday I will feel loads better for it

Well failed yesterday! Didn't end up going shopping so I was very limited and unprepared. Will do better today

Cheese and antipasti meats (salami, Serrano ham etc) is my favourite

Dozer · 27/07/2020 19:34

When office was open would have sushi, soup or a substantial salad from the salad bar with pulses, grains etc.

Microwave meals, eg curry, veg pots.

Ryvita or oatcakes and hummus or chicken slices, salad.

In lockdown have done some batch veggie curries/chiIli, frozen in portions, superfast to microwave.

theoracle11 · 27/07/2020 20:30

Yes I used to eat sushi for lunch at work when trying to cut carbs, it worked well actually. I'd add some smoked salmon on the side too to fill me up

managedmis · 27/07/2020 20:34

I have :

Soup (homemade, loads of veg and lentils in it so it's filling) with cheese and or ham /turkey
Jacket /sweet potato with tuna and salad
Big chickpea salad with feta and or chicken /tuna
Leftovers from night before

I know its tough as bread is so easy, but once you're in the habit it does get easier.

I find it easy to make a couple of big salads on a Sunday eve, then do a few extra portions of dinner through the week to have for lunch. Otherwise prepping a load of stuff every bloody day is tedious and will make you want to eat sandwiches!

missyB1 · 27/07/2020 20:38

Cereal, either Granola with loads of added seeds/nuts/berries or Porridge. To be honest I could eat cereals for every meal! Blush

minipie · 27/07/2020 20:46

Substantial salads are good. I’m not a big fan of leafy salads and they leave me hungry but there’s loads of great chunky salads like:

waldorf salad
beetroot and goats cheese
chickpeas with roast veg and feta
cous cous with cucumber,
red pepper, red onion (and any salad veg you have) and herbs
lentil and rice
potato salad with chives and smoked fish
leafy salad with potatoes, lardons and cheese or mushroom
prawn and avocado (I have this on crackers)

Another tip is making a little extra of the previous nights dinner, I usually find I can dress that up into lunch somehow with some added veg

theoracle11 · 28/07/2020 12:11

Fajita chicken and peppers leftover from last nights fajitas for lunch today, minus the wrap.
I second making enough in an evening to do for lunches through the week
