What to do with 4 whole coconuts?

Bought for a class I teach but not used. We finished school today and now I have four coconuts in their shells, one week past BBF.

What can I do with them please?

I would say eat them, but four may be three coconuts too far. There must be recipes (cake? coconut macaroons?) using fresh coconut.

If you like curries you can find some recipes using coconut. It freezes well, so any you don't want for now just grate and freeze for another time.

I hope they were ethically sourced. Read a horror story of abused monkeys collecting them the other day... Very sad.
