What to cook for dinner - something bit more time consuming?

It’s wet and miserable here with it forecast for all day, so am thinking of cooking something for dinner that takes more prep than we would usually want to do. In theory DS can watch a film while I cook with a glass of wine but I seem to be completely lost for inspiration!

I don’t want a roast as that’s definitely not Saturday night food to my thinking.

What would you cook for dinner if you had a bit more time to do it? DS will eat most things thankfully

Curry from scratch with naan, Bombay potatoes, saag also... The works!

Thanks for your suggestions. We’d had curry two nights before so didn’t fancy it again.

I ended up doing baked Camembert (as it needed using) as a bit of a starter and then risotto

I will have a look at your suggestions though, they sound good
