Most boring thread ever- how do I jazz up salad potatoes?

On (yet another) a diet, do well all day then go to pot with boring dinners 😴

I have a bag of salad potatoes to use tonight but don't want to just boil them, I obviously can't do anything with loads of oil/butter.

I've a good store cupboard with lots of spices, Lea Perrins, soy, sweet chilli, low call spray oil etc can anyone help me out?

I was going to say fry them (after boiling) but saw the diet thing

Cut them lengthways use the spray and use any spicy powder you have. Chilli, fajita mix,paprika anything

If you like cold potato salad, it’s good with plain yog used in place of mayo. I prefer it that way now- sometimes have it with chopped mint in too, sometimes spring onions and sometimes cumin.

Oven roast them with garlic you don't need a lot of oil you can spray/brush them,

Par boil, toss in lemon juice and soy sauce, sprinkle with whatever herbs or spice you like and roast.

One of my favourite things to do is par boil, smash each one with a potato masher and put a wee bit of parmesan on top before baking. I'm sure you could add a different topping.

Hassle back them. No need to parboil, cut the slits in them then toss in low cal spray, garlic (or any herbs you want) salt & pepper.

Into the oven for 50 mins - delicious :)

Toss them uncooked in the juice and rind of a lemon, add lots of sea salt and gound black pepper, add some whole garlic cloves to taste, and any fresh herbs you have or used dried thyme or rosemary.
ip into a shallow roasting dish and spray with that disgusting low cal spray oil Wink it should really be drizzled with olive oil, and then roast in the oven for about 40 mins until cooked.

I'd dry fry them and for the last 5 minutes bake an egg on the tray with them.

Salad with loads of finely chopped herbs eg parsley/chives/mint, 1-2 teaspoons of olive oil and squeeze of lemon juice. And maybe some lemon zest as well.

Sorry, just realised this does not fit with your store cupboard ingredients at all! But is delicious. I had www.bbcgoodfood.com/recipes/lemony-potato-broccoli-goats-cheese-salad as a fast day meal yesterday and it was really tasty, just the 5:2 version had only 140g of potatoes and half the cheese!

If you're calorie counting, toss them in the oil. Count the oil. Your diet will feel less joyless and the oil is actually good for you.

Chuck in roasting tin, with chicken stock, little oil, lemon juice, garlic and oregano. Season with salt and pepper

I like to roast new potatoes in the oven with sprigs from the herb patch of rosemary and thyme, or mint - either common, apple or chocolate. Dried herbs will do fine though. Takes about 50 minutes. Cut them in half if not the mini ones.

I'd cut up into small bits, boil and make parmentier potatoes - oil, garlic, rosemary or any herbs, cook on high in the oven and YUM

Once boiled, pour over lemon juice and grated zest, sliced garlic, some fresh rosemary, salt and pepper, a small amount of olive oil, and allow it to seep into the spuds. Really tasty.
