Shit On Toast and other favourite meals

A friend of mine’s go-to meal when she’s exhausted or just can’t be bothered is Shit On Toast, which can be any kind of other foodstuff (beans, tinned ravioli, spaghetti hoops etc.) placed on top of toast.

Another friend swears by Eggs Is Eggs, which comprises... eggs.

In our house, similar meals in the rotation include:

Stuff On A Tray (which involves placing the contents of the fridge on a tray and putting it in the middle of the table with a fistful of cutlery)

Vegan Slop (self-explanatory)

Noodles In A Bowl (fancy)

...any of which could be garnished with a clump of cress, a crescent of crisps, and/or a hot egg.

What are your similar rubbish but well-beloved standbys?

@ArcheryAnnie yes!Grated cheese, splash of milk, crack an egg in the centre, bake. Served with bread for dipping, HP or ketchup. My grandma's Saturday teatime.

Ifits, essentially a use up the oddments dinner. “If it’s open in the freezer you can have it” was the highlight of my childhood meal times. I’ve continued the tradition with my own family. DH loves it as much as the DC!

Pizza pasta. Whatever deli meat/veg needs using up, cooked in a quickly made tomato based sauce (purée/tinned tomatoes), add some herbs/garlic and mix in to pasta and top with cheese. If I can be bothered it goes in the oven for a bit. Kids loved it, especially when they were small - sneaked in veg but used word pizza!

We also do the stuff on toast thing.

Shit on toast does a disservice to a lot of good things, simple beans on toast with cheese. There's absolutely nothing shit about it. Many of the combinations are fond food memories of childhood. Together with...

Potato waffles and fried eggs
Fried eggs on toast with HP
Cold meat with baked beans and roast potatoes
Veggie sausages and fried egg on toast
Heinz spaghetti on toast with blanket or black pepper

we have "I don't know" ....usually some sort of casserole ish type thing involving odd chickeny bits, past its best veg from the depths of the veg drawer and maybe some stock or gravy or bits sqooshed out of all the dead jars/bottles in the fridge.

serve with mash/couscous/rice/noodles depending on the main theme of the sauce

Potato hash. Tinned corned beef, potatoes, carrots, peas, onions simmered I stock until a mushy mess. Served with beetroot or HP or if my Mum was feeling posh and short crust pastry on top.

Day before Pay meals.

This basically means dishing up something like 4 fishfingers, 2 burgers, a lone pie, some chips, some potato waffles, ooh...calamari...a garlic bread, a vegetarian nut roast, frozen peas and half a loaf of bread.

I don't get paid until tomorrow folks - look what was left in the freezer...

Cheese plate really made me laugh. What a genius. Cheese is definitely the highlight of any meal, so why bother with the rest, right.

It’s pasta with baked beans here. Student classic. Might whack an oxo cube in if I’m feeling fancy.

I don’t think it’s shit, but our favourite lockdown lunch is Heinz tomato soup, with a grilled cheese sandwich, smoked ham in the middle.

We also like “brinner” on a Friday night sometimes instead of a takeaway - potato waffles, eggs, bacon, sausages, beans, but at 7pm.

We have as our go to meals the Beige Freezer Dinner - surprisingly popular or the Cereal Mix - a mixture of the contents of various boxes of sugary cereal.

DD once came home from her dads and asked for 'tapas like daddy makes'. My first thought was how the hell does she know the word tapas.

On speaking to him, it was toast tapas, just slices of toast with different toppings! She loves it!

We have “vegan slop!” Usually rice, cous cous or pasta with random veg from bottom of fridge fried and stirred through. Sometimes with passata or tomato sauce. Maybe a tin of kidney beans.

Leek and potato bake.

Over boiled potatoes, often unpeeled, with chopped up ancient leek (or whatever veg in fridge, bashed with a fork, topped with chopped cheese, whack under grill for however long you can be bothered. That's it.

Used to have with Dh before kids. He can be quite nostalgic about it.

Compost soup can be quite nice. When cooking other meals, any veg offcuts that normally would go on the compost but are perfectly edible (leek tops, carrot ends, etc) are washed and go into a bag in the freezer, it gets added to until there's enough to whack into a pan and turn into a broth.

We call it "I don't get paid until Friday" sometimes it's great sometimes it isn't but it's basically a game of pile what you can find loitering in the cupboards and concoct something that resembles a meal. It's never anything too minging but not what you would choose if you had an option. DS is only 7 months but we keep small portions of leftover good meals in the freezer that we can reheat for him so he's not subjected to it.

I love a leftover tea. Monday if we have had a roast. Left over veg, potatoes, broccoli etc all chopped up and made in to patties then fried like bubble and squeak, served with bacon and an egg on top
