Empire biscuits- flour, egg yolk, icing sugar, butter, water. Minimum mixing, roll out, bake for 15 minutes. Jam on one, icing on another. Can do a whole batch of biscuits in 20 minutes, they’re amazing!

This is the one for the day when you look in the fridge and there is half a cabbage, dubious potatoes and a bit of old cheese. But it is lush.

@Imicola - Nigella and Mary Berry both have good recipes.

Spaghetti carbonara made to the traditional recipe is fabulous and very easy.

Puttanesca sauce for pasta.
Fry some garlic and anchovy fillets and a chilli...add tmato and oregano...add some stoned olives and capers....
Serve with pasta and sprinkled with flat parsley maybe some parmesan.
Or you can use it for pizza topping.

Broccoli pie. Broccoli, 2 rashers smoked bacon, half onion, Philadelphia garlic and herb. Cook everything, mix together and top with mash. DS 18mo favourite tea!

Tuna Lemon Pasta - zest and juice of one lemon in a pan, spoon of water from cooked pasta, throw in the chopped fresh parsley, stir it up, throw in your cooked pasta and add the tin of tuna (undrained). Sale and pepper to taste then cook for about a minute.
Simple and yummy.

Can someone direct me to a decent easy carbonara recipe please. Ive tried a few but none I liked and it's one of the only things I still make from a jar. I'd like to be able to make it from scratch then I can make a vegetarian one for ds1. It was his favourite when he ate meat.

Sliced mushrooms fried in a little butter. Add a squeeze of lemon juice. Serve on hot buttered toast.

Watermelon salad:

Watermelon chopped into small cubes. Halloumi slices fried till just brown then chopped into small cubes. Green beans chopped. Toasted pinenuts. That's it!!! Delicious and fantastic on a hot day.

Arrabiata sauce for pasta. Garlic, chilli, onion, balsamic vinegar, tin of tomatoes, tomato puree & seasoning. Delicious.

@TheFormerPorpentinaScamander fry bacon lardons and mushrooms, while boiling spaghetti ( or whatever pasta you like) in a bowl, 300ml single cream, lots of grated cheese ( whatever cheese you like) one egg, lots of black pepper. Put pasta, bacon and mushrooms into pasta pan add cream mix and stir in with no heat! Easy.

@wewillmeetagain thanks that looks perfect. I found so many recipes that said there isn't cream or mushrooms in carbonara. Confused I kept getting a scrambled egg with pasta in kind of thing Hmm

We had this yesterday and it was really tasty. We did cook the pasta separately though as I ever convinced it would cook in the sauce, which kind of undid the one pot factor...

We had home made flat breads and red lentil dahl last night and it was absolutely gorgeous even if I say so myself. Had the left overs for lunch and it was even better. Very simple but so tasty.

I make carbonara with bacon and garlic fried. Whisk 3 eggs with a little milk, black pepper and grated Parmesan. Then when the pasta is cooked and drained add in the whisked eggs and the bacon and garlic and grated Parmesan. But don't do it over a flame - just let the pasta warm the egg though. That means it won't scramble.

Tray bakes are done of my favourites.

Salmon, brocoliI, asparagus, chopped up potatoes, baby tomatoes, drizzled with anchovies and their oil, garlic and lemon. In the oven for 20 mins. Delish.
