Freezing pastry?

I need to do quite a bit of baking for sunday and some of it will be best done at the last minute. I need to do some of the prep today If possible as I have plans tomorrow.

If I make shortcrust pastry for quiche and sausage rolls today, what would be best to do with it? Freeze? Fridge?
Or will it be horrid either way and I'd be better off waiting until tomorrow and working late into the night? Sad

I also need to do
-scones
-lemon drizzle cake
-brownies
-coffee cake
-possibly shortbread biscuits

I don't like making pastry so always make 3/4 lots at a time & freeze what I'm not using straight away.

Defrosts fine & tastes the same to me :)

Pastry freezes brilliantly, just defrost slowly in the fridge.

Scones also freeze well, and you can just warm them in the oven from frozen and they’re basically like freshly made.

I didn't think they scones would be nice if done in advance @Teddy. I assumed that they would need to be done tomorrow afternoon. Thank you for the great tip.
