Leftover chicken cold meat

I have half a pack of chicken cold meat - thin sliced, not like proper chicken. It goes out of date today...any ideas for what I could use it in for dinner so it doesn’t go to waste?? We already had chicken sandwiches for lunch!!

I'd probably do something pasta-y with it - chop it up and add to either a tomato or cream based sauce.

Make coronation chicken: cook an onion, add some curry powder, cook, then some mango chutney, chopped apricots (dried not tinned) cool, mix in the chicken with mayonnaise. I made wraps with left-over cooked chicken yesterday with lettuce and cress. Delicious!

Coronation chicken sounds delicious, but unfortunately no apricots or mango chutney in!

Pasta is a good shout, could make a cold pasta salad type thing.

@Hyperion100 that really made me laugh!

Went with pasta, hadn’t thought of using it in it! Done a cold pasta salad with peppers, baby corn, mayo, mustard and the chicken. Was surprisingly very tasty!
