So my mum’s 70th was earlier this year and we bought her tickets for a show. Only with the current situation it’s been cancelled. I’m looking for a replacement only it’s difficult to plan anything at the moment so not thinking of an activity type gift. She had jewellery from others, doesn’t drink and has restricted diet. I’m kind of running out of ideas and in need of inspiration. Any thoughts very welcome!

a book box subscription? She would be sent a new book to read each month

If she likes to read, how about a kindle? Preferable to having books on a shelf gathering dust once she's read them in my opinion!
Also, a gift voucher for some books to put on it, but give her some suggestions of things she might like to read. Going on the website can be mind boggling, so a suggested reading list might help.
My daughters did this for my fiftieth!
I'm 60 now and would never go back to books

Coffee subscription.
You can get roses with 70 in the name, if she likes gardening.
A fruit tree.
Subscription to a magazine.
Adopt a trainee guide dog on her behalf. (My DD got one of these for Christmas, and loves it)
Teapot, and matching cup.

For my DMs 70th last year I did a bundle of 70 envelopes, each containing a memory.

I wrote to her family and friends and asked them to send me a "memory". Some sent a photo, or a wee note, some a letter, some wrote pages and pages, grandkids did pictures etc etc.

Bundled them up together with a ribbon and it was hands down the best gift that I have ever given!
