One dish meal ideas please.

I’m so fed up of cooking. Why does so much of my life revolve around food? Please help me save time by suggesting dishes that I can throw together and just leave in the oven to cook while I do something more interesting.
Ideally containing lots of veg and vegetarian dishes would be good too.

The recipe part of the BBC website used to have a ‘one pot’ section, don’t know if it’s still there though

Chorizo (or without)and Halloumi Bake. Put sweet potatoes (in wedges), red onion, peppers and chorizo (optional) in a baking tray with some oil, pepper and paprika. Bake for around 45minutes. Slice up a pack of halloumi put it on top then return to the oven for 10 minutes. It's nice with cous cous or bread.

veggie sausage casserole - if you use the frozen hotdog sausages you don't need to cook them before putting into the sauce.

Any kind of veggie curry - can just serve with bought bread or microwave rice.

Veggie chilli - I start it on the stove top and then shove in the oven - can be served with rice, bread, salad, wedges or even just some tortilla chips

Roast up a load of vege with some spices and eat with cous cous and minty yoghurt

Roast up a load of vege with some spices/add chickpeas and then mix into cooked rice like a kind of biryani - nice with salad and mango chutney or minty yoghurt

Easy cheese tart from the Green Roasting Tin: use ready rolled puff pastry - lay it out on baking paper (can use the paper it's wrapped in) on a tray. Grainy mustard to lightly coat the pastry. Sliced shallots on top then a load of grated cheese and bake until done - delicious and tastes far more effort than it takes. Serve with salad.
