Best chocolate fudge cake ever??

Why are all the recipes online so different?!

Looking to make a gorgeous chocolate fudge cake to brighten up a birthday with no family and friends :-(

I'm a decent cook but never made one before so don't have a 'feel' of what it should be like.

Does anyone have a fave recipe to share?

I want it to be really different from a choc sponge cake and I want the fudgey topping to be moreish!!

Any tips for me? I don't want to add to the birthday disappointment with a cake that doesn't deliver!

Nigella Chocolate Fudge cake ( it has sour cream in it)
I'm not a fan of chocolate cake but I've made this for other people .

(My choice would be Nigella Olive Oil chocolate cake but its not "cakey" very crumbly )

I haven’t ever tried the ganache though, so I can’t vouch for that, I normally just use a chocolate icing recipe for that bit. The cake itself is nice and moist though!

I've always made Mary Berrys version and it's gone down well.

I may give nigella a whirl next time though.

A bit of a cheat but the Betty Crocker devil's food cake mix combined with the BC chic fudge icing is a bloody dream!

Hellmans Chocolate Mayonnaise cake is a favourite birthday cake around here. It sounds grim, but the mayonnaise replaces the eggs and butter and makes the best chocolate cake ever.

At the start of lockdown when we couldn't get hold of eggs for love nor money, my daughter found a jar of mayonnaise at the back of the cupboard and made us an amazing treat cake

If I told my family I was making birthday cake with mayonnaise, they'd probably think lockdown had done for me and stage an intervention, driving hundreds of miles to save me from my lockdown self - maybe an idea to brighten up the birthday weekend Grin

Thanks to this thread I've made Nigella's cake, but topped it with the icing from the janespatisserie link above.

OMG. Nicest chocolate cake I've ever made.

I made the one linked to earlier but split into 3 cake tins rather than cutting 1 cake into 3. The ganache is quite dark but I think I used a higher cocoa content one.
