If I'm making fish cakes or potato cakes, they always stick to the pan and fall apart, what's the trick? After breadcrumbs or flour, how should I fry them?

Shallow oil preferably non stick pan and put in when oil is hot then turn down once it’s set on one side

Are you trying to turn them too soon? That’s when mine break up or stick.

The other thing that helps is chilling then before cooking.

Definitely chilling them in the fridge for as long as possible before frying works well to stop them falling apart
