Teriyaki chicken with lots of veg. Breaded chicken with roasted veg. Hot chicken salad.

Well my favourite is chicken and rice with Chinese curry sauce but sounds like that’s not your thing.
What about chicken tray bake?
Through some potatoes in olives - delicious

What veg? What spices, herbs and store cupboard ingredients do you have?

Depending on veg you could have stir fry, make a pie or tart if you have pastry or can make pastry, pasta bake, chicken Alfredo, chicken supreme, garlic chicken served on a bed of rice...

Chicken & vegetable casserole.
Chicken & vegetable in a white sauce topped with mashed potatoes or thinly sliced potatoes and baked .
Chicken & vegetable pasties or a pie.

Another vote for chicken fried rice, you just need egg, chicken, peas, spring onions, veg oil, soy sauce and sesame oil
