We will be having chicken burgers and potato wedges.
Last night we had prawn mayonnaise and potato wedges.
The night before was cheese on toast, because the stuffed pasta turned out to be spicy.

We’re having meatballs and spaghetti. Not my favourite but for some reason we have a packet of 24 meatballs in the freezer that need eating

Griddled halloumi, courgettes, tomatoes, roasted pepper
Cous cous
Dressing of olive oil, mint, garlic, lime (or lemon) juice

DH, at the age of 47, has finally decided to start learning to cook. He has only ever heated up stuff or made sandwiches before.
And he has discovered that he likes it, and enjoys it. I’m so happy as fed up of thinking of meals and organising and cooking it all.
This is one of his favourites and what he is doing tonight.

Beef stew with black pudding which has been in the slow cooker since this morning. Will have it with mashed potatoes and Yorkshire puddings.

We're having pizzas tonight - with peppers and deli meats for the carnivores, and artichokes and peppers for me. Salad, garlic bread and olives alongside.

This week's meals are going to be:

spring vege risotto (the rest of the artichokes, broad beans, asparagus)

Pasta - carbonara for the carnivores and a sort of primavera sauce for me using up the broad beans and asparagus

Veggie shepherds pie

Mushroom and stilton pies

Picky dinner of homemade wedges and homemade tsatziki then stuff like sausage rolls, hummus, salad etc depending on what people fancy

And then either veggie chilli, veggie lasagne, veggie spaghetti Bol or veggie soup, depending on what I fancy making to use up the rest of the fresh vege

Some of our regulars:
Beef burritos
Pasta, bacon, mushroom & peas
Homemade chicken and veg pie
Sausages, roast veg and cous cous
Homemade mushroom soup and a cheese toastie
We used to get fed up of trying to think up meals but then started having Gousto food boxes delivered and it’s great! Maybe worth a look, even if it’s just for recipe ideas.

@Lostnameperson that meal looks yum and right up my street! Do you use fresh mint?
@GiveMeAllTheGin8 nice selection but do you usually eat that amount of chicken in one week?!

Yes fresh mint. If you can’t get mint, basil or parsley will do as a back up, but it is best with mint.
I roast the toms & peppers in the oven, then fry the courgettes & keep them warm while sorting out everything else (and to avoid using more than one frying pan!)

We are having a takeaway tonight however I’ve not long done a meal plan for the rest of the week.

Lunches cous cous/ baby salads (cheese, ham, mackerel and tuna) or toasted sandwiches, I’m also making a detox soup to go with the sandwiches.

Dinners, Sunday dinner tomorrow then we have a mixture of homemade foods... salmon filet, Italian sausage and basil pasta, steak and chips, haggis balmoral chicken, chicken stuffed with mozzarella cheese and wrapped in Parma ham, Paella (chicken, prawn and chorizo) and the kids have requested rib racks, and salt and pepper chicken wings with sweet corn.
