How do people pay for stuff they are buying privately from someone on the other side of the country if they aren’t using cash?

It’s obviously a Thing but I can’t for the life of me work out how it would be done without an element of risk.

Although... as a seller you should never ever accept payment via PayPal if your buyer is collecting or arranging their own courier.

It's a well known scam, buyer pays via PayPal, collects the item/arranges own courier then turns around and files a non receipt claim. PayPal asks you for proof of sending, or proof of delivery... and you haven't got one because the buyer did the work. PayPal then sides with the buyer and refunds them.
