I've eaten a big bowl of pearl barley risotto and a big glass of wine. I feel lovely

Feeling all mellow and pleasant. Also quite smug I used the pearl barley from the back of the cupboard Smile What's been the highlight of your day today?

Steak, egg and chips, with a large glass of sauvignon blanc - it was bloody lovely. Finally started to get my taste and smell back after about six weeks and my mood has improved significantly Grin.

Pearl barley, spelt and bulgar wheat are 3 discoveries nice made since buying the Roasting Tin books.

All of them are absolutely delicious. The recipes in the books are fab. Easy, tasty and many are really healthy too.

Never made pearl barley risotto and going to look up a recipe

I made chicken enchiladas with salsa verde today, and they were bloody gorgeous. Never made them before.

@PuttingoutthefirewithGasoline yep just like normal risotto but took a bit longer to cook. I think it has more nutrients?? Not sure! I'm on the 2nd glass of wine now not much use!

Will have to try spelt and bulgar wheat another day Wink

There's an ottolenghi pearl barley risotto with marinated feta which is absolutely sumptuous. I made it for my veggie mum one Christmas and ended up eating most of it myself. I also quite like a mushroom one, with lots of parmesan and paprika. It's legit good for you, and fills you up! Can't get DH or the kids to touch it, which means plenty of delicious leftovers for lunch the next day. Would love some more grain recipe recommendations.

We had egg and chips and it was bloody lovely! I've been working SO hard to make healthy meals and not waste a scrap of food and make sure everybody likes everything and make sure there's veg on each plate - honestly, just frying a few eggs and chucking some oven chips on felt like I was taking on the world and winning.

Egg and chips is such a great dish I don't know why we don't had it every week! I especially like it with a big slice of ham (doesn't even have to be naice ham) 😋

Thanks, I think so, dh was confirmed but I wasn't tested. He didn't lose his taste though so he got less sympathy which is right and proper. I've started to enjoy cooking and eating again and life is so much better - it's the simple things!

I'm a big fan of pearl barley risotto. In my experience much easier than arborio
.you don't have to stand stirring for hours and it turn out fine. Quite a basic one bit with bacon mushroom and leek is really nice.and super cheap.
Bulgar wheat is also amazing..try it with chopped cucumber, onion, tomato and vinaigrette. Works really well with a bbq.
Is full of fibre and really good for you.

Goats cheese and pesto pasta here, mixed in with peppers and green beans, now have a hefty gin, I too am mellow and pleasant x

Very jealous of talks of egg and chips! Sometimes the simplest meals are the best. I had lamb and courgette linguine with a large glass of white after a day at work! Can i join the merry club??
