Will the ground almonds in this recipe make the cake taste of marzipan?

It requires double as much almonds as polenta.

I hate marzipan, and can eat Bakewell Tart at a push. Would it taste less almonds than these?

It's usually for texture. You can use any ground but. DH doesn't like almond either, so I grind something else, whatever I have.

No, ground almonds just taste mildly nutty. I use them for body in curries.

Not really, I have used ground almonds to make a wheat free sponge cake. I hate marzipan (but love almonds) and was quite happy with the taste. Its definitely more nutty. Cake

Weirdly no it does not, no idea why.

No. I use ground almonds as a flour substitute and it doesn't really taste of much!

It won't I don't think. As PPs said, baking with ground almonds tastes slightly nutty, but not strongly almondy at all. Which I found rather disappointing as I LOVE marzipan Grin

So, WHY does marzipan taste like it does? When ground almonds taste mildly nutty (as they do)...

DisgraceToTheYChromosome · 15/05/2020 07:31

Marzipan tastes like that because of shitloads of benzaldehyde, the aroma chemical present in almond oil. It's easy to synthesise, chemically identical to the natural substance, and cheap.
