Veg box celeriac, beetroot ideas please

Love a good veg box and have been on a few of these threads, also looked back at previous threads for ideas but nothing suitable so please, help me make something delicious from my 2 celeriac and 6 betroot before they wither away to nothing in my fridge. Open to combining the two and I also have some lovely big ripe tomatoes if they could go with them as well. Freezable portions would be a bonusSmile

I eat a lot of celeriac but I only ever Mash it or make chips from it, sprinkling chip seasoning on them when cooking. Beetroot I can't help you with as I don't eat it!

Beetroot is lovely roasted with a little bit of balsamic vinegar. I eat it with pork chops 👌🏼

Celeriac dauphinois is my go to accompaniment to pork. Same as making potato dauphinois but so delicious.
Celeriac remoulade is also great as an accompaniment to chicken or pork schnitzel.

Make remoulade from the celeriac- like a coleslaw but better.
I would also cook the beetroot for salad.

I steam celeriac and mash it up with cream cheese and a bit of pepper. Not super mashed - I keep a bit of texture in.

I love roast beetroot.i roast it in the skin and then peel.

Cook the beetroot and then slice it to make humous and beetroot sandwiches. Mmmmmmm.

Mashed celeriac here too. I add butter and a dollop of yogurt. Very tasty and goes very well with fish.

Roast beetroot is a very underused veg in my view. I had a glut from the garden one year so tried just about every beetroot recipe going and that was the easiest and probably the nicest part from beetroot fritters (which are gorgeous but more work).

Just peel them, oil them lightly and bake.

I don't think I have ever made remoulade (not knowingly anyway) I am curious to try it. The beetroot burgers sound yum, my ds5 I think would love them

This beetroot curry is regularly on the menu in our house. Roasted celeriac or celeriac mash is delicious.

I add butter, or sometimes cream to the mash. That's about it! Prefer the chips though - they're yummy!

Celeriac- you lose quite a lot of the skin and nobbly bits BTW. I also grate it into coldslaw or on salads, mash or into chips. Sometimes I mash with potato or another root veg.

Beetroot- a salad with feta, balsamic glaze, spinach leaves and pine nuts.
I've also made a cake with it! Don't use large, woody beetroot though, otherwise the cake will taste dirty.

We mash celeriac 50/50 with potatoes.
Beetroot, corned beef and potato hash.
DS has taken against beetroot though so I may do a cake next time.

Ooooh beetroot curry 😀. I could do celeriac soup in the instapot. I made some curried parsnip soup in it last week as I got a load of parsnips in the box and it was super tasty, I'd never made parsnip soup before

I did see an interesting celeriac recipe where you roast it in its skin for two hours, then peel the skin off and slice into steaks, then I think you fried in butter. Sounded tasty, but too much hassle for me! There's only me as eats it in our house.

Dh makes a gorgeous celeriac and beetroot dauphinois. I think it’s an ottolenghi recipe. It’s truly amazing.

Another vote for soup with your celeriac. It pairs well with cheese so you could even crumble in some blue cheese when you serve or add a whirl of good olive oil and a grating if Parmesan
It’s a STUPID name but Jamie Oliver’s zombie brains recipe is utterly delicious. It’s basically a whole roasted celeriac which you baste with garlic cloves, butter and thyme. It’s dead simple and incredibly tasty. You “carve” the celeriac to serve it and any leftover slices reheat quite well covered in foil.
