how to make Macaroni Cheese go from good to AMAZING?

Currently I can make good macaroni cheese (even if I do say so myself) , but always feel it could be even better.

Anyone got any secret tips?

I put a tablespoon of red pesto on the bottom of the dish before adding the macaroni cheese. Then I mix breadcrumbs and grated cheese and sprinkle it over the top and grill it. Triple cheese goodness.

Tiny pinch of nutmeg, chilli and thyme. Nothing like a teaspoonful. you shouldn't be able to taste the individual flavours. It just adds something. And yes, loads of cheese.

I like grilled herby tomatoes with it too.

Delia's macaroni with leeks and bacon is delicious. I think she adds nutmeg. Also, it always tastes better the next day, reheated and doused with salt and pepper.

We're having our first takeaway in months this evening but now I want Macaroni Cheese (that ideally was made yesterday!)

Add some smoked cheddar (use it in a mix of cheeses as it's a bit overpowering on its own), also some mustard powder, and cayenne pepper.

There’s a Jamie Oliver recipe for cauliflower mac and cheese and it is epic. Leave out the cauliflower if that’s not your thing. The topping is breadcrumbs, pancetta and rosemary IIRC and it’s gorgeous.

A mix of cheeses including a blue cheese. Add bacon bits, spring onions and a crushed up packet of crisps sprinkled over the top before you bake it

don't put all the cheese in the sauce.... chop or coarsely grate some and add it to the drained pasta in the dish, use different types of cheese too...mozzarella is really nice poked into the pasta.

buy very strong mature cheddar

put a dollop of mustard into the roux as you make the sauce

nutmeg is brilliant in the sauce too

and bacon on top of the sauce, but under the grated cheese and it must go in the oven or at the very least under the grill or it's just cheesey pasta. and NOT macaroni cheese

Infuse the milk for your béchamel before making the sauce. I used onion, garlic, carrot, smoked salt and peppercorn last time. Just simmer in the milk then leave to infuse before straining and using the milk.

Jamie Oliver trick,, when making the sauce, simmer the milk then add an onion cut in half, a bay leaf and a clove of garlic and stand for half an hour to infuse the flavours. That and bacon and tons of cheese will do the trick.

Mustard in the roux, toasted garlic breadcrumbs on the top, not too much sauce that the mac and cheese is sloppy but that the pasta is well coated. God i love mac and cheese!!!!!!!!

Add bacon, gammon or sausage, plus peas.

Add nutmeg or marmite to the sauce. You can't taste either, but it gives it a real "je ne sais quoi."
