how to make Macaroni Cheese go from good to AMAZING?

Currently I can make good macaroni cheese (even if I do say so myself) , but always feel it could be even better.

Anyone got any secret tips?

Thanks OP you inspired me to make it for tea today - I always put in a shed-load of cheese and some mustard, now today I added some truffle oil - was brilliant! Gonna try some of these other ideas sometime too.

We've just finished eating macaroni cheese!

I cook Chorizo until the oils come out and then sweat onions and add sweetcorn then mix it into the pasta.

We also add broccoli or green beans/peas.

Silly question but where are you all buying macaroni elbow pasta? I haven't been able to find it for many months now (pre corona). Tesco, aldi, lidl, Sainsbury's/ no one stocks it.

It was the only pasta left in my Sainsbury’s a few weeks ago. It’s only a medium sized store so maybe it depends on the area? It was tucked away on the bottom shelf.

Not too much blue cheese or it will taste like Elastoplasts.

Bacon and onion bits, the ones that come crispy in a tub, scattered on top.

Mascapone in the sauce.

A teaspoon of Worcester sauce in the sauce.

A little bit of single cream added at the end. It's what my granny used to do and her Mac and cheese was the best!

I made macaroni cheese the other day, using a few of your tips (yes, really, first time since May!)

added Stilton a bit of paprika some chopped up bacon.
