how to make Macaroni Cheese go from good to AMAZING?

Currently I can make good macaroni cheese (even if I do say so myself) , but always feel it could be even better.

Anyone got any secret tips?

Nutmeg and mustard powder in the sauce.
Stir through a good glug of truffle oil into the pasta before adding the sauce to the pasta.
Serve with gammon or sausages for the perfect combination.

I add lardons into it and mustard & cayenne into the roux then top with fried garlic soak breadcrumbs or Panko before going in the oven.

My DD could live on macaroni cheese but if I put any fiddly bits on like breadcrumbs or leeks or bacon that would be heresy in her eyes. I just make a nice plain cheesy sauce but with a lot of cheese and a dash of mustard, a high sauce to pasta ratio, and a good dollop of grated cheese on top before baking. Simple but effective.

The butter keeps the pasta more moist as it cooks in the oven. Also, because the butter is really hot it helps the cheese melt evenly through out the pasta.

Few teaspoons of dijon mustard (makes it taste cheesier) and some cayenne pepper.. Gives it a bit of a kick.. And lots of cheese.. Way more than you think you need.

Crispyish bacon on the bottom, very cheesy macaroni cheese, sliced tomato on top. Bake!

Yes, a bit of Dijon in the sauce (made with full fat organic milk infused with onion, bay leaf, etc), and breadcrumbs on top. If you get some sourdough and whizz it in a processor with a bit of olive oil and a little thyme or oregano it makes very good breadcrumbs.

I have a pot of truffle and white wine mustard which makes anything taste better, but especially macaroni cheese!

Pancetta, not too much, just a little. Sainsbury’s do a little double tub and I use one. Parmesan as well as cheddar, some in the sauce and some for the topping. A teaspoon of mustard powder in the sauce and I gently fry an onion in the butter before making the white sauce (and leave it in.) I prefer it baked rather than grilled.
