For 18yo DS1 to learn please!

Lockdown has given him a sudden interest in cooking which I definitely want to encourage but we seem to be a bit caught up on the same old pasta, grilled chicken or salmon, and stir fry recipes. Lockdown seems to have killed off some of my imagination for me as I'm struggling to come up with many suggestions for him! What are some tried and tested quick dinners you love?

DH and DC are unfussy and will try most things, I have IBS and can't touch citrus or shellfish, also limited with egg.

I haven't tried it but Jamie Oliver did a "corner shop" Curry in his "lockdown" series which I've earmarked. Seemed simple and the idea was its corner-shop ingredients. Give it a google, probably a good one for him to try.

Would have said also tortilla/omelettes but eggs unfortunately. He could make them to have with say rice and you could have a small piece?

Thai red salmon fish cakes (recipe on bbc good food website) - you don’t need egg to bind them as the red Thai paste does that job

Easy paella (again, recipe on bbc good food website) with chicken and chorizo (add more garlic and chilli)

Wagamama released their katsu chicken recipe last week. I made it and it is really authentic. The only egg would be to coat the chicken before rolling it in flour and then breadcrumbs. Would that be too much egg?

The Wagamama sauce freezes well, so you could double up and freeze enough for another day.

I would suggest a simple curry using tomato purée, coconut milk and whatever level of spiciness you all like?

Thai green curry
Homemade escalopes / nuggets / salmon fishfingers

Big fan of Nigella's Express. You can look up the recipes online. Favourites are chilli and chicken curry in a hurry.

My 15 year old made Jamie's five ingredient chicken tikka the other day and it was delicious. It's basically a whole chicken with tikka paste on you put it on a wire rack with a tray of new potatoes and cauliflower underneath and the cook in the chickeny tikkary juices add coriander at the end and that's it
