cut them in half so they open like a book, shove in some cheese
roll back up, and wrap with ham/bacon
concoct some sort of tomato-ish sauce in a dish big enough for the chicken, with ketchup, BBQ sauce, a splash of milk, pesto ...or a stir through pasta sauce or passata
roll chicken in sauce so it's covered and then shove it in a hot oven for about 40 minutes, try to remember to turn over the chicken about half way through so it's not flabby underneath
Serve with mash.....Hunter's Chicken!
Out other favourite is to slice them right though in half to give two thinner portions, bash them out a bit with a heavy pan or meat mallet, daub on mayo/BBQ/ketchup/mild mustard and press into bread crumbs
you can add herbs or parmesan to the crumbs if you like
then to cook you can do them in the oven on a tray or I prefer to fry them
