It has instructions on the back which make it look simple
Any tips for a culinary novice?

I soak mine in lukewarm water for a minute or two then fill them with a selection of shredded salad bits, tofu, peanuts and some sauce like hoisin or something like a satay sauce that I make with nut butter, sesame oil, soy sauce, lime juice. They turn out different every time as I use up stuff that's in my fridge.

Ooh the satay thing sounds nice, or I could make a dip then the children, won't whine.
Do you make them big like mini wraps or more like a spring roll? Do they pop open?

I make mine about the same size as a spring roll, the wrap sticks together quite well as long as you don't soak them too long or overfill them. I put my sauce inside as I prefer the flavour and it's a bit less messy but the traditional way is to dip. If you look up recipes for Vietnamese summer rolls you'll get some tips and ideas.
